1. Cut off all the fins and tail then rub all over with salt to remove the fishy smell. After rubbing, rinse clean with tap water. Rinse the stomach thoroughly and remove the black stuff. 2. After put on the chopping board and slice as shown. 3. Chop the fish head, bone and tail to keep aside to make soup. 4. Slice the fish meat as shown. 5. Slice the spring onions as shown. 6. Slice a piece of ginger with skin into strips as shown, put both spring onions and ginger into the fish. 7. Add in a tsp of salt, 1 tsp of white pepper powder, 1 tsp of light soya sauce. Massage the spring onions and ginger together thoroughly to squeeze out the juice then massage the fish altogether thoroughly, a bit longer can also reduce the marinated time. Set aside to marinate for 20 minutes. The spring onions and ginger can be replaced with Chinese cooking wine. 8. Slice another batch of spring onions as shown. 9. Slice red chilies as shown. 10. Slice green chilies as shown. 11. Slice ginger as shown. 12. After marinating the fish, remove the spring onions and ginger. Then add in 1 tbsp of cornstarch (玉米淀粉), mix well. Make sure all the fish meat is coated with the cornstarch. 13. In the pan, add in oil, when hot, sauteed the red and green chilies for a while then add in a bit of salt. Then fry again, frying with a bit of salt will make the red and green chilies even got more flavour. Remove and set aside. 14. In a pan, add in more oil to fry the fish meat. Fish skin face down. Put in and leave it for a while, or just swiveling the pan a bit. When golden brown at the bottom then turn over. Fry until both sides golden brown then add in the ginger strips, fried red and green chilies then drizzle around with Chinese cooking wine, a bit of cornstarch water (to thicken a bit). Cover and simmer for a minute. Then add in the spring onions. Fry briefly and remove. 15. If for children, do not add in red and green chilies, use red and green pepper.
