    1 cinnamon stick
    1 tbsp black peppercorns
    1 tbsp cumin seeds
    1 tsp fennel seeds
    8-10 cups water

    For the Pulao:
    2 cups basmati rice (soaked for 30 minutes and drained)
    1 large onion (finely sliced)
    2-3 green chilies (slit)
    1 tbsp ginger-garlic paste
    1 tsp cumin seeds
    4-5 green cardamoms
    4-5 cloves
    1 cinnamon stick
    2-3 bay leaves
    1/2 cup yogurt (whisked)
    1/4 cup cooking oil or ghee
    Fresh coriander and mint leaves (chopped, for garnish)
    Lemon wedges (for serving)
    *Instructions:*
    Making the Yakhni (Broth):
    1. In a large pot, add the beef, halved onion, garlic bulb, sliced ginger, bay leaves, green cardamoms, cloves, cinnamon stick, black peppercorns, cumin seeds, fennel seeds, and salt.
    2. Pour in 8-10 cups of water and bring to a boil.
    3. Once it starts boiling, reduce the heat to low and let it simmer for 1.5 to 2 hours, or until the beef is tender and the broth is flavorful.
    4. Strain the broth and set the beef pieces aside. Discard the spices and vegetables. Keep the broth (yakhni) aside.
    Preparing the Pulao:
    1. In a heavy-bottomed pot, heat the oil or ghee over medium heat.
    2. Add the sliced onions and fry until golden brown.
    3. Add the cumin seeds, green cardamoms, cloves, cinnamon stick, and bay leaves. Sauté for a minute until fragrant.
    4. Add the ginger-garlic paste and slit green chilies. Cook for 2-3 minutes until the raw smell disappears.
    5. Add the whisked yogurt and cook for another 2-3 minutes, stirring continuously.
    6. Add the cooked beef pieces and mix well.
    7. Add the soaked and drained rice. Gently mix to coat the rice with the spices.
    8. Pour in the strained yakhni (broth) - the ratio should be 2 cups of broth for every 1 cup of rice. If the yakhni is less, you can add water to make up the difference.
    9. Add salt to taste. Bring the mixture to a boil.
    10. Once it starts boiling, reduce the heat to low, cover with a tight-fitting lid, and let it simmer for about 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.
    11. Turn off the heat and let it sit, covered, for another 10 minutes.
