    -----------------------------------------------------------------------------------------------------------
    BARLOW BBQ PORK RUB
    1/2 cup black pepper
    1/4 cup salt
    1/4 cup paprika
    1/4 cup brown sugar
    1 tsp lemon pepper
    1/2 tsp garlic powder
    Dash of sage
    1/2 tsp onion powder
    SPICY APPLE BOURBON BBQ SAUCE
    3/4 cup ketchup
    1/3 cup apple cider
    3 tbsp maple syrup
    2 tsp worchestershire sauce
    1 tbsp bourbon
    1 tsp cider vinegar
    1 tsp soy sauce
    1 tsp black pepper
    Pinch each: cinnamon, clove, ginger powder, allspice, cayenne pepper
    Mix all ingredients in a saucepan and bring to a boil over high heat. Reduce heat to low and let simmer uncovered for up to 30 minutes or until sauce thickens.
    BBQ PORK STEAKS ON THE PIT BARREL
    Light the Pit Barrel according to the instructions included with the product. While you're waiting for the charcoal to light, season the pork steaks with Barlow BBQ Pork Rub or your favorite seasonings. Place the pork steaks in the fridge until it's time to cook.
    When the charcoal is ready, dump it into the Pit Barrel and add some chunks of your favorite smoking wood. Hang the pork steaks in the Pit Barrel, cover and let smoke for an hour and a half or until the rub has set.
    When the rub has set (it no longer feels pasty), remove the steaks, wrap in foil, and place them back in the Pit Barrel. Continue to cook until the pork steaks are probe tender - ie you can easily insert a toothpick into the middle of each steak. Remove the steaks, slather with sauce, and enjoy!

    Gonna try it! I'm always encouraged by shorter cook times on some flavorful pork recipes. Sometimes the belly can't wait waiting for the brisket or pork butt to do its thing. Nice one, Barlows!

    Excellent pork steaks, Matthew. I live in south-central Illinois and pork steaks are a staple here. You did this cook justice and the sauce is damn neat St. Louis style. Great cook, brother

      Thank you, Biggs! Temps have been milder here, with highs in the 50s and 60s. Had a cold front on Tuesday with highs only in the 30s, low that night was in the teens. Boooooo!!! We have winter lol! Stay warm, my friend!

    I've been bbq catering for almost 17 years and that money shot of you tearing the shoulder steak apart is the best bbq shot I've ever seen. Kudos on the camera work and what camera did you use btw?

    Fantastic video like always and a great recipe... Pork steak is a slice taken in a pork butt ? Because i never see that at my grocery store and i want to try it someday... Continue your great work... 🥂

    • @BarlowBBQ
      @BarlowBBQ  4 года назад +2

      Yep, pork steaks are sliced from the pork butt. I'm sure if you ask your butcher, they will be able to slice you some. Be sure to ask for them to be cut into 1.5" steaks! 👌👌

    what about the temperature of the barrel, i have no experience with this kind of smoker

    • @subparwelder
      @subparwelder 4 года назад

      the PBC runs a bit hotter than you are probably used to with smokers, 270-300 degrees is normal. You can make it run lower (or hotter) but it is designed to run at those temps.
      ( I know this is late information but someone else may wonder)
