I wonder doesn't paneer get hard as rubber when cooked for such a long time... Whenever I usually cook paneer for a longer duration it becomes very chewy and hard...... Kindly clarify..
Hi Vishal, Paneer gets chewy and hard if the paneer by itself is not well made or if it cooked in pressure cooker. if you cook it the way I have shown it will not be chewy.
Packed paneer will not work, i have tried this recipe with fresh paneer and it is wonderful but if you use any packed paneer then it will be a disaster.

Ulta pulta? Come on this is your own cuisine. To answer your question, we lived in a valley where milk was plentiful (due to cattle). Things like hokh syun (vegetables that were dehydrated during Summers) were popular due to the climate. Also, kashmir did not subscribe to the Hinduism you see around the country. Kashmir shaivism was prevalent (which allowed meat according to some scholars). There was also the impact of invasions- the Afghans and Persians who had ruled over kashmir are known for their use of curd and milk with food! Hope this helps. Namaskar.

Kasuri methi is not compulsory. I have put it to make it more flavorful. if you want you can avoid adding it.
Miss what is heeng?? I am junior cook from North East.. Is it core ingredient?
Heeng is Asfoetida. I use it in my cooking but if you want to avoid it you can.

I’m a Kashmiri and Kashmiri never cook paneer like this... we never use milk in Kashmir dish.. Haldi to kabhi nahi.
You forgot the main ingredient.... Cumin/Jheera....safed Or Black? 🙃
Rajesh Dhar black zeera is not the main ingredient. It enhanced flavor. I have not used it in this dish as I have used kasoori methi.
