i have a juice blender at home can i just use that instead of mashing them like you done? when inverting how do you know how much citric acid to sugar to add? thank you
As long as there isn't a lot of preservatives especially like sorbates you absolutely could, but if there's a lot of preservatives, it won't let your yeast work.
@TheShineshack yeah i know about the preservatives. I tried with natural apple cider and the flavor just didnt come over. Think i added to much sugar and made the potential alcohol to high. I got making good neutrals down but trying to add some flavor has eluded me so far

Do atleast 2-3 lbs peaches per gallon so 20-30lbs mash them up real good remove half of the pits leave the other half in can add a good nutty flavor then add 1lb sugar per gallon I recommend either ec-1118 yeast or Mangrove Jack's M02 yeast when you run it through the still infuse your thumper with peach snhapps comes out really good I have a video on peach brandy if you don't want to add sugar you will need a lot of peaches and you want get very much in the end
hi i am currently making an apple/pear mash to make into schnapps/brandy and not using any sugar or water only yeast for the mash and i have a few questions perhaps you can give me tips on 1)does letting your mash settle and clear up as much as possible with longer ageing before distilling in a pot still make for a better quality tasting shine or it won't matter? does the suspended yeast make a difference in bad or better taste? 2) before doing my second run should i dilute my low wines to say 20%abv with water as i seen many ppl say to do or wont this dilute the natural juice flavors, aromas and alc even more striping them away? 3) once i finished blending and want to age it for a few months in glass should i keep it at the same abv strength or cut it down to my drinking preference first?

I have collected over 250 lbs of wild apples. I am going to try to make your brandy recipe with them. Do you think it will work? Some of them are green and some are red and green. They come from 2 different trees miles apart and they are a juicy sweet and tart apples. They are really good. What do you think? Thanks man
Absolutely I always try to do a mix of apples it turns out better that way I never do just one type of apples just do 3-5 lbs per gallon for your mash you can do less but the more you use the more flavor this Brandy mash way by far the best I have ever done it had fantastic flavor I look forward to doing it again

I'm fermenting in the house with closed fermentation with an airlock. So I am going to have to use a closed fermentation. Will that work? If I use fruit pectin and and wondering if I should use amylase? I scored roughly 80 pound of Apple yesterday. Winesap also Golden Delicious fix to mash in. Any suggestions?
I wouldn't use amylase. Just use your pectin but absolutely closed. Fermentation is another good way to ferment it ferments the exact same as open fermentation you'll get the same outcome

As fall comes to an end, especially around here, people often find themselves with extra apples. After canning and preserving as much as they can handle, many are happy to offload the extra. I've let a few locals know that I'm interested in taking the extra apples. I leave out boxes for them and simply ask for a call once they're filled. It's works out quite well for everyone involved. :)
