The transition where he went from e dominant to A minor is called secondary dominance. There’s a ton of videos on this, but essentially if you want to transition to a minor chord take the 5th of the chord, in this case the 5th of A minor is e, then you use the e to make a dominant chord before you go to A minor. Use a full diminshed chord, there are 3, dropped any note half a step and it turns into a dominant. From there you can resolve to root chord.
With that you can go from F full deminished, drop F half step to E to turn it into E7 and resolve to Amin7 or Amaj7 your choice

Altered dominants and tritone substitutions are SUPER useful for spicing shit up.
Dominant 7's sounds kinda dated nowadays, even though they are crucial. If the dominant 7 sounds like it doesn't fit the vibe, try to replace it with a sus7 chord

Why does it sound way better when you go from the dominant 7 to a minor chord than going to a major chord?

From what i know dominant chords always have a note or two pit of the key to create they're dissonance, i may be wrong though
