- Special Rice Pudding (serves 4)
2 cups cooked brown rice
1/2 cup Tofu
1/2 cup water
2 Tablespoons Tahini
1/4 cup maple syrup or rice syrup
1/2 teaspoon vanilla extract
Pinch (1/8 teaspoon) cinnamon and nutmeg
1/2 cup Thompson Raisins
1/2 cup walnuts, chopped
1 teaspoon lemon rind grated
Preparation:
Pre-heat oven to 350 degrees.
Blend tofu, water, tahini, maple syrup, vanilla, spices until very smooth and creamy.
Combine this blend with the cooked rice and stir well
Add the raisins, nuts and lemon rind and stir well and pour into an oiled baking dish.
Cover and bake for 20 minutes.
Uncover and cook until tip browns and gets crusty.
Serve hot or cool to room temperature.
