Grate frozen butter, keep dough cold through the process. When you cut the dough don't twist and place them touching in the pan . That will help them rise higher than 2 inches! Good luck out there folks😊
Hey Sam and crew! Just flew in from Illinois. First stop was not not tacos and somehow found room for a burger and some poutine from Samburger. All I can say is wow! Well worth the stay here for a night before flying up to San Jose. Keep doing what you’re doing!! We love you guys and can’t wait to eat there again tomorrow before heading out.
The tacos used to be so much better too. Last time I stopped in they weren’t nearly the same.

I was excited when you added the black pepper to the biscuit dough then bummed that you didn't continue to fold the dough mixing the pepper in. But then when I saw the final product and saw how much the black pepper added to the visual appeal of the food I realized I should never have doubted. That looks absolutely delicious.

First suggestion; use lard instead of butter
Second suggestion; freeze the lard and then use a grater to grate the fat into the flour
The lard makes a flakier biscuit and adds a nice flavor. You brush the tops with melted butter after baking
Oh…and brush the tops with a little buttermilk before baking to get a wonderful brown crust on top

As someone born and raised in Alabama, the black pepper on the biscuits is an ingenious addition
I worked in a bakery for 5 years and Sam not knowing a pastry cutter is funny and reminds me of myself not knowing the name of a tool for the longest time, if you said pastry knife to me I would know what you meant.
The guy that trained me had a very heavy accent and I thought he called it a "dotter" and he might have, it made sense to me because it makes dots in the dough. 4 years after working at that bakery I learned it was called a "docker" which name doesn't make sense to me. A person that went to pastry school started working there and I asked her to pass the "dotter," and she said "the what?" And I said "the rolly thing that makes the dots in the dough." That's the day I learned I was calling a docker the wrong thing for over 4 years and I was the head baker at that point, telling people I trained it's a "dotter."
A little tip for making biscuits. Freeze your butter, then use a box grater to shred it into the flour.
4:36 an added step you could do is paint a lil egg wash on the top for a more golden crust

I think y’all need to do a smash with cornbread stuffing as the “bun” being smashed with cranberry sauce and a smashed or sliced turkey. A thanksgiving smashed burger if you will.
Here in south texas we have a fast food restaurant called “Whataburger.” They have a honey butter chicken biscuit sandwhich. Can you do your own version on this pleaseee 🙏🏼

Have you tried the "raw veggie" smash burger. Mix the beef with uncooked onion, red pepper, garlic and shredded cheese. The char that's created is delicious. Great series!

Since you guys just back from Korea might I suggest a pork tender sandwich version of what we in Kansas City get at Kitty's Cafe. Kitty and her husband were Korean and the pork tenders could be had with gochujang sauce which was absolutely incredible. It's still a fixture in KC with lines out the doors and I'm sure your viewers would love it. Not exactly a smash-month thing...but I guess you could smash a pork tender if you wanted to. Great content guys.
How about a
1) buffalo smashed chicken sandwich and blue cheese dip.
2) chuck burger with great horseradish sauce
3) chuck burger with blue cheese sauce
I think a potato masher would work well for getting the butter the right consistency in the flour. Just saying that there is probably a faster way, but sometimes it just feels good to be extra hands on, I get that too.

As a southerner this feels sacrilegious. I don't believe I have ever had or heard of having pickle or lettuce on any biscuit ever but this looks tasty.
Used to work at Hardee's (Carl's Jr for you), would put Swiss cheese on our chicken biscuit
That looks like a pretty tasty sandwich. I was on a buttermilk biscuit kick several years ago. Getting them dialed in until you can repeat it can be challenge. I think it was a phase I was going through because it was not sustained. But they came out pretty good. I used the America's Test Kitchen method of using a food processor for most of the mixing and cutting the frozen butter into the flour to keep things from getting too warm which can happen with using the hands.
Not that you need it, but helpful hint I just started doing. Make sure the butter is really cold and grate it with a box cheese grater. Works great👍

You're right, Sam, you have to mix your biscuits by hand. I have a friend who was born and raised in the south, and she has an expression: "I bet she mixes her biscuits with a fork." It is not a compliment. So there you have it.

So, many of the things you do really make me wanna be there trying them. But THIS one actually made my mouth water! I am so gonna try this! Thanks for the simplicity. Hey Sam and Max the other day I made an air fried panko shrimp poke bowl. It was super simple shrimp, rice, cucumber, avocado, and A spicy mayo that I made with Tapatio. I know you could make it 100% better would love to see a video on your rendition of this recipe.

HEY QUICK TIP (grate Frozen butter Works amazing and will quickly defrost
Use a cheese grater on the butter it's quick and easy and less work and mess
I usually use a potato peeler for the butter flakes
When my sister and I were kids, dad would get one of us to cut or serve up whatever dessert it was, and the other one got to pick first. That always resulted in extremely equal portions.
As a lifelong southerner, I will agree that Sam is NOT a baker as evidenced by those biscuits.

I make similar chicken biscuits but my biscuits are much taller and I use hatch chilies instead of pickles. Also I make them with duck thighs they are tasty.( have used turkey)
