    I reduce the sauce in a separate pan until it coats the back of a wooden spoon, and toss the chicken in afterwards. Keeps the meat crispier that way.

    I'm really sorry for writing this, but sometimes I get happy tears watching Ms. Laura Vitale cooking coz she reminds me of my late Mom who loved collecting recipes and watching cooking lessons on tv.

    Eeeeexcellent tip about using chicken thighs because it makes a huge difference. Yes, it's healthier to use chicken breasts but it's not as moist.

    • @pennywells9824
      @pennywells9824 6 лет назад +5

      Sweet y Salado....she uses a lot of sauce....if you take the chicken out and let it reduce a bit then add the chicken back you don't over cook the breast....and it is very tender and juicy....

    Ok I sooo have to share this story. I am in the hospital and I was watching the Orange chicken video again because im trying to give my self a visual heads up on making it for my son's birthday on the 31st. So my nurse had just walked in to chexk my vital sings. She stopped and said is that Laura I hear ?!?!? I replied, "ooh man you know Laura too ?? She says, Yes, she's a great cook !! I said, Ooh Man I LOVE Laura she's AWESOME !!! My son requested her chocolate cupcakes for his birthday. She is a huge hit in my house. They pretend to be chopped critics every time I recreate something Laura's shared. There's just no way I can express how much love there is for you in my home.

    I didn't know that about the cornstarch and egg-white coating. I didn't think it would make that big of an impact but that chicken looked really crispy! Not overly so like a breading or batter might do, but just the edges and sides... the colour was amazing. I so look forward to making this, and using that technique with other recipes too ^^
    Thank you so much for sharing Laura, as always you are kind, beautiful and all things lovely ^_^ Next will you share with us a recipe for some Italian favourites? Gnocchetti verdi, perhaps? Or chiacchiere? Might I entice you toward sharing with us a recipe for panzerotti pugliesi? Pretty please? :3

    • @CarameliaM
      @CarameliaM 10 лет назад +3

      Angela Jiang you're completely right. Since the chicken bits are simmered for another 10 minutes, after being done, the coating helps protect the meat, plus it gives the sauce something to hold onto and really stick to the chicken bites.

      In all the Chinese recipes i have seen it is important to use the corn starch coating. I tried it without once (because i didn't have any cornstarch) and it was not nearly as good or even close to authentic. i highly recomend you use it.

    Laura, how about making stuffed peppers?
    My mother taught me an extremely easy and very delicious recipe. The measurements are rough estimates, but the procedure is this: first roast the poblano peppers to withdraw his skin. While they are toasting, make white rice and grated cheese (we used Mennonite). Realism stew that goes inside is ground pork or beef, or it may be both, onion, tomato, garlic, salt and pepper. While this cut lettuce into small pieces and tomato. To serve put a layer of white rice over the whole plate, poblano chili stew in, Mennonite sprinkle cheese on chili and stew, then put a bed of lettuce (we like quite generous) and a little tomato salt to flavor the lettuce and serve it ready. My mom goes with a green tomatillo sauce that she prepares and believe me, this dish is the most delicious in the world and my salvation when visitors come. Hopefully you can pass on your channel XOXO

    That's TOTALLY an Asian recipe. A great leap for you !!!
    You can try to find "five spice"powder and sesame oil in an Asian store, they really develop the flavor of meat in Asian recipe :)

    • @willydawgs
      @willydawgs 10 лет назад +7

      With due respect, five-spice powder would add an anise element to this dish that would totally change the flavor and in a very negative way for anyone who doesn't like that licorice undertone. And sesame oil would also alter the flavor. I think Laura's rendition of this dish is just perfect, sticking to the intended goal of "orange" chicken.

      spot on Willy..5-spice would ruin this dish.

  • @annielim9346
    @annielim9346 10 лет назад

    Hi Laura! I made this dish and it was delicious! But I did change a few things. I marinated the chicken with soy sauce instead of salt, a little oyster sauce and a very small amount of ground up onions, garlic and ginger mix (it keeps the chicken flavorful and moist) . Also I reduced the amount of orange zest, added more of the rice vinegar and added some Chinese rice wine in with the liquids as well. the wine gives it a more traditional flavor. Thanks for all the recipes! I'm always so inspired!

    I appreciate you didn't fry it in grease twice like many recipes. Thank you for your service and videos.

    I love orange chicken but seeing this recipe I was really skeptical at the beginning of the video since it's not done the traditional way. However after watching the whole video I was really intrigued so I decided to make it myself and it's now one of my favorite dishes. Thanks Laura

    My family totally loves this recipe..... We substituted with apple cider (out of rice vinegar) and it turned out delicious!

    This looks so good and I will definitely try this one. I've seen a lot of different people cook orange chicken and some have used mandarins instead of oranges. I was wondering if there is a significant difference in the taste for anyone who has tried both?

    It's like kind of chinese cuisine.^^
    In China, we have a dish like this, but we use lemon juice instead of orange juice, and we deep fried the chicken first with the corn starch, and then mix up with lemon juice and sauce.
    We always use ginger as it's good for our body in chinese medical view.
    There is one more dish in chinese restaurant. We may add chestnut and spicy pepper for chicken dice too called "Kong Bo Kai Ding"^^

    This was so good! I didn't have fresh ginger so I used powder, didn't have scallions either, and I used whole bone-in skinless thighs and it still was great. It was light, fresh, and all the flavors mingled lovely without any of them overpowering the dish.
