- Making masala chai at home is extremely easy, yet so many people will go to their favorite coffee shop and get one there instead. Often times they're using a concentrate that could be made at home in a few minutes, and have the best one you've ever had. Plus that means masala chai, hot or iced, whenever you want it in seconds.

Everytime someone says 'chai tea' I chuckle a little

For those of you who are lactose intolerant, Masala Chai tastes amazing with coconut milk :)
and almond milk !
Soy milk as well. Although my friends have told me they don't like it so take my word with a grain of salt

INGREDIENTS:
15 green cardamom pods or 6 black cardamom (I used a mix of these)
4 cinnamon sticks (16g)
1 Tbsp (10g) black peppercorns
12 cloves
1/4 tsp fresh grated or ground nutmeg
2 3-inch strips oranges zest *optional*
1/4 cup (55g) granulated sugar
1/3 cup (45g) fresh ginger rough chopped
1/2 cup (23g) loose leaf black tea
Method:
Take your green/black cardamom, cinnamon sticks, black peppercorns and cloves and place in a baking sheet; toasting them at 350 degrees Fahrenheit for 6-8 minutes.
Once toasted, combine your spices with 1 quart of filtered water in a pot. Add in your ginger which has been rough chopped, your granulated sugar, orange peels and ground nutmeg.
Bring your mixture up to a boil over medium-high heat, then immediately reduce it down to a low simmer and let it sit for 10 minutes.
Remove from heat and allow it to cool for 30 seconds. Drop in ½ cup of loose leaf black tea. Let it steep for 4-5 minutes.
Strain your mixture and reserve your liquid.

You can also pan-toast to bloom the spices if you're paying very close attention to it. That's what my grandmother used to do ^_^
I like doing each different spice individually. I know by smell when they're perfect. Then I give them a little crack with a stone khal batta before tossing them in the pot

i love that he actually adds ginger and nutmeg. other recipes i’ve seen don’t include it and imo that’s what gives masala chai a good kick! love it with oat milk or evaporated milk!
I’ve always made a masala chai concentrate and I let the spices hang out until the liquid is room temperature, so much flavour! I add fennel seeds to mine, helps improve digestion. I use almond milk (I don’t do dairy) and sometimes I use a vanilla almond milk (so good) and it’s like a dessert in a cup.

I've been hanging onto this for a while and finally tried it out today. All I can say is WOW! Where has this been all my life??!! I added a star anise since I have them. And I even used tea bags since that's what I have. Still the best masala chai I've ever had. The best way I can describe it is "smooth". It's like the flavors are just melded together better than you get with store bought chai teabags or concentrates. I'll be upgrading to a good loose leaf when I run out of bags, but even as is it's fantastic!

Wholeheartedly agree with you Zach. I feel like JW is a friend who lives far away from me but keeps in touch by sending me videos of what he's up to in the kitchen. Nothing too long or elaborate but always entertaining and informative. -- I happen to really like chai but never thought about making my own concentrate. This video makes me think I could do it without too much time or effort. Just got to get my hands on the spices. I may give it a try for Xmas to share with family and friends as an alternative to coffee with dessert. Hope your safe wherever you are. Be blessed.

Nice recipe to start with and nice to educate more westerners. You are right there are countless recipes and even family members might make their daily chai slightly differently, as some like it more spicy and add more pepper and crushed ginger, where others highlight different flavours. The best thing is to experiment and see what tickles your own fancy. It is a healthy start to a day, especially the colder mornings. Most families I stayed with in rural India and in the towns would make it fresh every morning for the morning brew and during the day and not keep it overnight. Don’t think of the more time it takes to make as a chore, but more of a nice healthy, tasty start and time to chat to family members in a relaxed way, or catch up on your plans for the day. Chill with a hot drink.

@JoshuaWiseman You can roast the spices on a pan instead of baking them, that blooms and enhances their flavour..
Pro Tip: Once the roasted spices cool down a bit, pound them roughly in a mortar and pestle, or grind roughly in a spice grinder, you are going to filter the concentrate thru a sieve anyways..

I love masala Chai.
I went on a study abroad to India maybe a year and a half ago, and we were served some of the best masala chai I've ever had.
My teacher also saw some mix in a shop and sort of scoffed at it, saying that regular people just make it themselves. I got the feeling that her family would just use the spices that were around the house.
Since then I've made some myself, mostly basing my recipie off of the bon appetite one.
Now the starbucks chai latte tastes artificial to me. Can't beat the stuff from scratch!

Substitute the fresh ginger with dry ginger powder (called as Sonth in India). It has a better flavor and the natural starches present in ginger powder gives a nice consistency to the tea.

If you don't want the caffeine, this tastes amazing with just milk. Also, you can get pre-ground mixed masala for milk/chai at pretty much any Indian market, but it won't be as good, obviously, as using fresh spices

kingmejam I figure a week or two. Or you probably can freeze it up to 6 months. Pour it in ice cube tray. And freeze it. Then put it in a freezer bag. Don’t forget to date it. Then when you want some put some cubes in your cup pour some milk. If you want it warmed up. Put the cubes in the microwave or in a pot on the stove and melt them.

I generally like your recipes, but this was hilarious! Could help laughing thru the whole video. I am from India and have had a lot of chais all my life. No chai is ever so complicated. I’ll give you a simpler recipe to make a delicious chai.
Bring 1 1/4 cup of water to a rolling boil. While your water is boiling, take a mortar and pestle and pulverize 2 green cardamoms, 1 clove, 1-2 pepper corns, 1/4” piece of cinnamon. If you have ginger power, add a 1/4 tsp to the spice mix or else use a 1/4” piece of ginger root and add to the water. All all spices to the water and let it come to a boil. Once boiling, add 2 tsp of sugar (more if u like sweeter teas) and 1 tsp of black tea leaves (CTC preferred). Let the whole thing steep for a couple of mins. Then introduce 1/4 to 1/2 cup of warm milk (microwave it for 30 secs) depending on how milky you like your tea. Let it boil and boil and boil for a very long time. Boiling it for a long time is the key here. Remember you have 1 1/2 to 1 3/4 cup of water + milk to begin with. You want to reduce it down to 1 cup. Keep stirring while it boils and reduces down. Thats you classic Indian chai - one that you will find at millions of small tea stalls all over India.

You got to steam or boil your milk. Thats what gives it that silky or creamy (respectively) texture.
I personally think its equal effort to just make it from scratch and skip the concentrate.
1- Add fresh lightly crushed spices to a 1/2 - 3/4 part water
2- Bring to a boil on medium heat
3- Add tea and drop or cut the heat to steep.
4- Add 1/4 to 1/2 part milk
5- Bring to a boil (For milk texture and natural sweetness. Personal preference as to how much to boil and reduce. I only keep it on the boil it for like 10 seconds.)
Tips for a quicker chai:
1- It is faster to start with boiling water from an electric kettle, but make sure to crush spices so it infuses.
2- You can add milk and water together. If using tea powder or dust, just bring to a boil on medium heat. If using tea leaves, drop the heat so it can steep for around 5-10 mins before reaching a boil.
3- Hold off on adding sugar until the end. Adding sugar makes it harder for the tea and spices to infuse and also makes it take longer to boil. This can be a good thing if you want a lighter chai.
my spice recommendation (per person/cup):
1-2 green cardamoms (sweet spice)
1 clove (fresh and cooling)
1 (leaf/shard) of a star anise (bright and complex, can be overpowering, so stick to just a shard even for 2-3 cups)
1-1/2 stick of cinnamon (sweet and warm)
if you need warming:
1/2 tsp ginger powder (very different from fresh ginger)
3-4 peppercorns
a hint of turmeric (1/8 tsp)
1-1/2 stick cinnamon
a hint of nutmeg
Others:
anise (not star anise) or fennel seeds - helps with digestion
turmeric + ginger - Power healing for your throat
Suleimani tea - Spiced black tea:
half the amount of tea + sugar, cardamom, cinnamon, fresh ginger, and a squeeze of lemon juice. (its just magical. Great way to end a heavy meal)
a proper Masala Chai tea can only be properly prepared in the Assam Region with water from the Barak River, first gargled by a tribe elder then by a shaman. nice try

Chai means Tea in Hindi. So saying ‘masala chai tea’ is like saying ‘masala tea tea’.
Edit - forgot to mention - masala chai concentrate - what a GENIUS idea!
It means the same in Swahili, its always weird hearing "chai tea"
But most of the people watching this video don't speak Hindi or Swahili so knowing it's a Tea recipe is kind of important

Hey Joshua! Love your content, super educational and well-done. Just a few friendly critiques: the audio quality for the opening segments from the cupboard (which admittedly must be pretty hard to get right, given the acoustics of kitchens) is always a lil echoey, and the B-roll always seems to come in about a second too soon - I'd give it a bit of breathing room after you introduce it, just to space things a bit more naturally. A second or so of blank screen while the music gets louder would really go a long way, imo. Keep up the great work :)
Oh and if i may add the volume difference is huge between the cupboard scene and the recipe.

ThePinkChilli it is true. I have made Chi Tea with Honey and brown sugar before. Not together. But I have made it before with those ingredients. Don’t knock it, until you try it. I don’t buy Chi. Because most of the time they make it with cinnamon. And I’m allergic. So I always looking for new recipe without it.

typically, in India, the leaves don't just stew, they are boiled. and boiled hard, with milk. the idea with even water is to get the liquid slightly thickened by boiling, maybe the tea leaves have that quality, maybe it's the just the milk reducing. that being said, this looks quite nice

I make traditional chai every morning. I make it with crushed green cardamom steeped in only milk then add in the loose leaf black tea with sugar. So good. A friend of mine from India taught me.

Indonesian here looking for a good spicy chai. Ive gone through a dozen of recipes through both youtube and the internet, and im surprised that this is the one for me! I decided to just make it straight away by dividing the recipe into 5, adding 1 cup of water and 1 cup of milk. Simmered for maybe 5 minutes. Perfect.
Great with honey, will be trying with dates tomorrow morning. Will admit that I didnt have peppercorn on me nor cloves, so i used blackpepper instead 😂 might cut back on the next try but both this with nutmeg gives it a lovely kick.

Chai doesn't mean tea in English. Tea means tea in English, and Chai is the kind of tea being made. You aren't part of some secret, or cultured, for knowing that chai means tea across the various languages of India.
