@@themeatcuttingacademy7613, I actually bought two bellies today. One is skinless, and I plan to do something almost exactly like what you did. I've done it before, and I love the result. The other belly is skin-on, and I plan to butterfly that, season it, roll it up with the skin on the outside and then cook it with my new rotisserie for my SNS kettle grill. Hopefully I'll treat it right and that skin will pop....
