Cooking with Ken: Rice Recipes for Camping and Hiking

  • Rice is a staple food for two-thirds of the world's people, especially in Asia and Africa. It can be savory and spicy in one meal, creamy and cheesy in another, and sweet and fluffy or crunchy in yet another. Rice is also nutritious, lightweight, durable and inexpensive - qualities important to backcountry travelers. The biggest downside to rice as a trail food, is that it takes 20 minutes or more to cook. You can reduce this time, by presoaking rice in water (to carry in you backpack), or you can use “minute rice” for some recipes.
    This video shows simple recipes that I made during 2-day camping trip in the Sam Houston National Forest, Tx, USA, March 30-31, 2018.     VEGETABLE RICE SOUP
    - 1/3 cup steamed rice
    - 1 heaping tbs bullion (or equalivant)
    - 1-1/2 cups water
    - cut veggies of your choice, such as: tomatores, green onions, spinach, mushrooms
    Mix ingredients and boil for 15 minutes. Recipe makes 1 serving. Enjoy.
    SIMPLE BOILED RICE PUDDING (Recipe from 1700s)
    - 1/2 cup medium grain rice
    - 1/2 raisins
    - 16" x 16" muslin pudding cloth (any fine weave cotton fabric without dyes)
    - baking twine
    - sauce (sugar and butter or molasses)
    Mix rice and raisins in pudding cloth and tie with baking twine. Put in boiling water for two hours, adding additonal hot water as needed. Remove pudding. Ready to serve with sweet sauce when cool. Recipe makes 4 servings. Enjoy.
    EGG FRIED RICE
    - 1 egg
    - 1/2 cup steam rice
    - 1 tsp soy sauce
    - 1 tbs olive oil
    Heat frying pan, add olive oil and egg. Stir in steamed rice. Add a few drops of soy sauce. Recipe makes 1 serving. Enjoy.
    VEGETABLE RICE SALAD
    - 1/3 cup steamed rice
    - 1 cup spinach (or other green veggies)
    - 1 small carrot
    - green onions, tomatoes
    - rasins or cranberries
    - small package of salmon or chicken (optional)
    - balsaimic vinegar (or other dressing)
    Mix rice and chopped ingredients. Sprinkle dressing and mix. Recipe makes 1 serving. Enjoy.
    RICE PUDDING IN A CLOUD
    - 2/3 cup steamed rice (use middle grain for best results)
    - pinch salt
    - 1 cup skim milk
    - 1/4 cup sugar (or alternative such as honey or maple syrup)
    - egg
    - 1/2 tsp vinella extract
    - 1/2 tsp cinnamon
    Make steamed rice by mixing 1/3 cup rice and 2/3 cup water. Add pinch of salt and simmer for 20 minutes. Divide egg. Mix milk, egg yoke sugar, cinimmon and vinella extract. Gradually add to cooled steam rice and put over heat until mixture is thick and creamy. Remove from heat. Whip egg whites and fold into cooled pudding. Bake in 300 F oven until golden brown, about 15 minutes. Recipe makes 2 -3 servings. Enjoy.
    CARDBOARD OVEN
    Make the cardboard oven shown in this video from a corrugated cardboard box. Cut cardboard into two pieces: 12 in x 28 in rectangle and 9-1/2 in diameter circle. Glue heavy-duty aluminum foil to the cardboard with contact cement or white glue. Allow the glue to thoroughly dry for several days before using the oven. Cardboard insulation provides stable temperature control, that is much better an oven with only aluminum sidewalls. Use metal skewers as a baking rack. In this demonstration, I used BioFuel as the heat source. Allternatively, a can of Stereo, or charcoal in a fire bowl could be used. Do not heat cardboard ovens above 450 F. Do not expose cardboard ovens to direct flames of a campfire.

    Ken your videos are always awesome. This time however the overnight time lapse with the Native American flute and your silhouette moving around the camp at sunrise????? Well I couldn't do anything but smile and watch the beauty happen. It was perfect Sir. Respect for you as always. So fun, so simple and looked delicious too.

    You seem so genuinely happy it's fun to watch your videos. I used to be a World War 2 re-enactor and I used to make ramen with boullion and a can of peas and carrots and some canned chicken in a WW2 German canteen cup over an Esbit stove. My friends and I would also carry cheese that did not require refrigeration and maybe some rolls.
    If we would have had RUclips back then, and you had these recipes, I would have surprised my friends with food like this using the period gear we had. The only extra thing necessary would have been a spoon to mix and serve with. So simple, yet so brilliant.

    Hi Ken, Want to thank you for such a wonderful video. All those recipes look delicious and I think that last rice pudding recipe you made with the fold in meringue, looks really good. I think I’m going to make that this week. I’ve had rice pudding for meals! I pictured clearly in my minds eye the scene of the sunrise and the heron flying in and landing then taking off pretty fast, once he realized you were there LOL. I could Almost hear his wings flapping. I love the beaver, too too cute. Keep up the good work now that spring is finally here, I can’t wait to get outdoors more. You truly inspire me.     Hi Kenneth, good job. Meal -extender (rice / pasta / beans / buckwheat /mashed potato / etc) extends you taste choices. A packet of soup becomes a meal. Better and safer than MRE.

    Rice pudding in a cloud is the bomb Ken! Grew up with rice pudding with raisins often, add some cinnamon and milk and you're good to go.

    Now I'm freakin hungry. Thanks a lot lol. I appreciated the additional wildlife footage; that, and the recipes, makes me want to get out very soon. An observation: Ken always says "try it, you'll like it" as a matter of course (or so it seems), but when you were enjoying the Rice in a Cloud, that statement really, really came through.

    Great video Ken. If you wanna try something different substitute some of the rice with an equal amount of quinoa (they are both about 220 calories per cup). Bit of both a texture change and a more complex nutrition spread. Two cups of rice, a few tablespoons of olive oil and a tablespoon of chia seeds and your over a 700 calorie meal.

    It looked like you were making Chinese food in the wild at the start there! Very fun video and great recipes. Typically people are resigned to eating processed foods for convenience or grilling some meat at best.

    Thank you Ken. The egg fried rice has always been a staple for breakfast, for me. A little green onion, peppers or anything left over is good to add to it. I love the pudding recipes. I'll try them all. You always make great videos, thanks again. Peace. Oh, I almost forgot. The nutritional value of rice goes down the more it's processed. The "instant" rices have next to none, regular white rice is better, but still low. I have taken to using whole grain rice, even on the trail. It takes close to an hour to cook on a low, low heat, but has much more nutrition. However, some recipes are much better with white rice. Bon apetit.

      I have a story for you and in this story is a recipe that I think you'll enjoy very much. This is a true story. I'll try to be brief. One day I visited a relative of mine and he told me he was going to make carrot cake for his church social. So, I told him not to let me stop him and to continue while we visited, which he did. First, he put a cast iron skillet full of water on the stove to boil and began mixing the ingredients for a normal carrot cake. He brought out an aluminum pie pan and poured half the batter in it. Then he placed it (floated it) in the boiling water. I thought he had completely lost his mind. When I asked him what the heck he was doing he told me that the boiling temp of water is very near the temp for baking and that the surrounding water keeps the temperature even all around the cake, which is what you want in a cake. He said it won't brown the cake, but, if its coated with frosting, who will know. He did the other half of the batter the same way and, thus, had a two layer, frosted carrot cake that was quite delicious, (I did get to sample some). NOW, at the time I was working as a guide in Oregon packing people into the Jefferson Wilderness, leading a mule string, and I can tell you that this works on an open fire, where it's hard to bake a cake and made at least one of my clients very happy when we presented him with a birthday cake, complete with candles. after being in the mountains for five days. A box cake mix and a can of frosting can make someone's day. All I can say is, "Try it, you'll like it". Peace.

    Ken.. have you tried Jasmine rice? It's a little expensive. but will last longer than regular rise.. a great staple to just eat as you go.. Also.. if you haven't wondered.. many of the early settlers used rice here in the US. Some great recipes are found in the journals of revolutionary soldiers here or perhaps.. Hana Glass. .and Amelia Fitzsimons. I use a lot of them.. Or in the journals of one 1700's soldier.. .a pound of meat a day.. you can find many of these and they work great while on the trail. I've done the rice pudding here.. also have tried forced meat balls and the other bread puddings.. They are totally awesome.. just bring nutmeg. LOL. Another one is a Carolina snow ball.. was a vegetarian recipe.. but hey.. it fed the troops during the 1700's.. looked similar to the one you made in this video. and processed the same way.. it's better with zonte currants.. good luck find them today.

    For your info, rice that is produce in different place have different water contents. We call it new or old rice for short. There is more than 1000 types

    Ken love your video.... I've been enjoying fresh rice, beans and wild grains on the trail USINGmyKeith Titanium Rice cooker.... You should get the TI rice cooker, it makes perfect rice on the trail, since it is a pressure cooker... WORKS great every time. search got Keith Titanium Rice cooker.

    Great recipes! I often make my meals in a similar fashion, saves a lot of money! Those freeze dried meals are so expensive! TFS
