Delicious Carrot Cake Cookies - Twisted Mikes

- Mom makes us a delicious carrot cake cookie recipe. Two carrot cake cookies filled with a cream cheese icing! It has all the flavors of a carrot cake that can be eaten with your hands. (not that we wouldn't eat the carrot cake with our hands). Enjoy the recipe.
Preheat oven to 375
Line cookie sheet with parchment paper and butter paper.
Mix:
1 1/8 cup all purpose flour
2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
Mix well
In mixing bowl combine
1/2 cup softened salted butter
1/3 cup plus 2 tbsp brown sugar
1/3 cup plus 2 tbsp sugar
1 large egg
1 tsp vanilla
Mix until well blended, then slowly add flour mixture.
Once mixed add
1 cup shredded carrots
1/2 cup raisins
1/2 cup chopped pecans
Mix well
Place 1.5 tbsp of cookie dough on buttered parchment paper (on cookie sheet). Make sure they are 2” apart.
Bake at 375 for 15-17 minutes. Once baked, cool for 5 minutes then move to baking rack. Once cooled completely make icing.
In bowl combine the following:
8oz cream cheese softened
3 tbsp butter softened
1/2 tsp vanilla
2-4 cups of powdered sugar. Amount will depend on how soft your butter is and how sweet you want them. We used 2 cups.
Spread cream cheese icing on inside of 1 cookie, then attach a second. Store in the refrigerator.
