This bundt cake recipe is so quick and easy! We make our lemon bundt cake with cake mix, lemon Jello, oil and 4 eggs. Plus butter and flour to prepare the bundt pan - and if you haven’t made a bundt cake recipe before, don’t be intimidated! INGREDIENTS
For a moist Lemon Bundt Cake:
1 yellow cake mix
1 cup hot water
1 small package lemon Jello
4 eggs
¾ cup light extra virgin olive oil (or vegetable oil)
For the Lemon Glaze
2 cups powdered sugar
½ cup freshly squeezed lemon juice - about two lemons
Luscious Lemon Cake Recipe
Preheat the oven to 350 degrees. Add lemon jello to hot water and stir to dissolve. Mix all cake ingredients together. Place into prepared bundt pan and bake for 35 - 40 minutes.
Lemon Glaze Recipe
Mix powdered sugar and lemon juice together. Pour over cake while it is still in the bundt pan, within 2 - 5 minutes of it coming out of the oven. As soon as glaze soaks into the cake, invert the cake onto a wire rack and remove the bundt cake pan.
Our recipe for Luscious Lemon Cake is one both sides of our family uses to celebrate birthdays and holidays :) My youngest son had to take a family recipe for a school event and chose this one one to share. He renamed it Luscious Luminous Lemon Cake because he said it glows with happiness and love :) It tastes just like the lemon bundt cake Martha Stewart makes and comes together super quick!
