She always made more icing than she needed, then took the rest of the icing, mixed it with coconut, and rolled it little balls for treats. She always used Baker’s coconut too. This video brings back such memories. I need to try making one myself.
My momma made the prettiest coconut cakes. They looked like a big snowball. She used seven minute frosting and put coconut on top and sides. It was so delicious. She passed in 2009 and I haven't got the nerve up to try and make it.😊
That looks delish! My Mom had dementia as well. She lived about 8-9 years after we first noticed something was off. She was an awesome cook too. It is sad to watch someone you love disappear little by little. It is like losing them twice. Keep doing these awesome video's and sharing your secrets!
Baker's coconut is absolutely the best to buy.. Our walmart sells Lopez cream of coconut in the row near soda with drink mixer things..This cake looks so very tasty!

I always use whipping cream in my frostings..........also 1/2 butter and 1/2 Crisco shortening.....yes cream of coconut should be more solid... That mixer is poor, center never gets in the beaters, wish you would use your Kitchen Aid. BEAUTIFUL!
Cream of coconut cake. Drooling. Was the cherry chip cake big in the Carolinas too? This Gen Xer like using the cuppa method making box cake mix. Cuppa whole milk. Cuppa mayonnaise. One box of pudding and a box of Dream Whip. I didn't get big eating bad food, every pound was delicious.
I’ve purchased that brand of coconut cream from the Dollar Tree. I’m not saying they always have it and I haven’t been to the $ store in a while, but I’ve purchased it there a few times. Decent size can, but not as large as the one you used.
@@susanjane2498 they are called, 'bake even cloth strips..... You wet them and wrap around outside of pans... The moisture keeps the outside of the cake from getting done quicker than the middle, thus having rounded layers. I made my first ones from wetting paper towels and then wrapping them in aluminum foil and wrapping the foil around the sides of the pans. Actually they work better than the fabric strips you can buy cuz they tend to loosen and not stay in good contact. I used mine multiple times.
This cake looks really delicious. You know what might be good…..if you had taken the remainder of that cream of coconut and drizzled it on the layers before icing them. It would have made them so moist! But, a big ole piece of that coconut beauty would taste wonderful about now!

Off subject please…but I really need an answer about dried beans/oeas and shelf-life of them …I know I had read somewhere that they would be good for x amount with word years mentioned … I have mine in glass containers with good lids…read the other day though it’s saying in months🤦🏼♀️ this was aside from freezing them etc or something don’t remember all of it.. 👍🏻😁appreciate your help on this Tammy … you really helped me about not having to wash them‼️‼️👍🏻😁 really don’t want to throw these away 🤦🏼♀️

Well I would say about a year. And you should wash them if they are a Wal-Mart or store brand because they really do have dirt on them lol.
