- In today's video I am cooking up a delicious smoked BBQ turkey! Now, this isn't your typical run of the mill Thanksgiving smoked turkey. This smoked turkey has big bold flavors, and is a nice change of pace from a traditional bird. I spatchcocked this turkey to allow for the entire smoked turkey to cook evenly, and it was delicious! If you want a turkey that will absolutely blow your guests away this Thanksgiving, then you have to make this smoked BBQ turkey! The nice thing about this cook is that cooking it on the pellet grill allows you to spend more time with your guests, but gives you an amazing flavor!!

Smoked Baby Back Ribs Recipe:
Ingredients
-SuckleBusters Area 51 Brine Kit (Link below)
-Ash Kickin' BBQ Honey Chipotle Rub (link below)
-Tailgater's BBQ Party Rub (link below)
-Blues Hog Raspberry Chipotle Sauce (Link Below
Instructions
Prep:
1. Begin by making your brine per the package instructions. Allow the brine to completely cool to below 40°F before pouring it over your turkey.
2. Once the brine has cooled to a food safe temperature, completely submerge your turkey in the brine and refrigerate for 12-24 hours.
3. After the turkey has brined for 12-24 hours, remove from the brine and pat dry.
4. Spatchcock the turkey by using heavy duty kitchen shears and cutting out the spine.
5. Once the spine has been removed, pat the cavity of the turkey dry. Once the cavity is dry, take a heavy duty butchers knife and slit the top of the breast bone so the turkey lays flat.
6. At this point season your turkey starting with the inside cavity of the turkey. Season with a light layer of Tailgater's BBQ Party Rub, followed by a light layer of my Ash Kickin' BBQ Honey Chipotle Rub.
7. After the inside cavity of the turkey has been seasoned, flip the turkey over so the skin side is up and put onto a wire rack. The wire rack will making transporting the turkey to the smoker easy, and it will also allow you to rotate the turkey for even cooking if needed.
8. Once the turkey is on a wire rack, season the skin side of the turkey with the Tailgater's BBQ Party Rub and the Ash Kickin' BBQ Honey Chipotle.
Cooking
1. Set the temperature to 275º F.
2. Put the turkey on the smoker, and allow to smoke undisturbed for at least one hour.
3. After an hour has passed, it's a good idea to get a probe in the thickest part of the turkey breast. Insert your probe, and then spray the turkey with a vegetable spray, or drizzle melted butter on it. Repeat every 30 minutes until the turkey is done and it's time to sauce.
4. Once the turkey hit's about 158°F, it's time to sauce the bird. Drizzle some raspberry honey chipotle BBQ sauce on the turkey and brush evenly. Allow the sauce to set until the turkey reaches 160° F.
5. Once the turkey reaches 160° F, remove from the smoker and let rest on the counter uncovered for 15-20 minutes. Please note: The turkey will continue to cook after it is removed from the smoker. Pulling the smoked turkey at 160°F will allow carryover cooking in the turkey to reach 165°F. If you are not comfortable pulling your turkey at 160°F, continue letting the turkey cook on the smoke until desired temperature has been reached.
6. After the turkey has rested for 15-20 minutes, carve your BBQ smoked turkey, eat and enjoy!!

Thanks so much Gary! I glad you enjoyed it!
I thought it looked darn good and it had a nice twist with the sauce. Thanks!
I pray you feel better soon bro. Thanks so much for this
Landon, thanks so much man! Really appreciate that! I’m on the upswing and feeling good! Glad you enjoyed the video brother!
Great cook! From my family to yours....Happy Thanksgiving!
Top notch!
I just wanted to say a big thank you for this video. This receipe was a big hit with my family. I highly recommend this receipe.!!!!!!!!!!
Thank you for the support and kind words!
Our favorite part of Thanksgiving are the Turkey Sandwiches after, looks and sounds delicious, looking forward to trying this recipe out, Happy Thanksgiving, Safe Holidays, Thankyou!
Good looking bird bro, nice job 👍.
Can’t wait to use the honey chipotle rub this thanksgiving!!!!
I love it! Thank you so much for the support, you don’t know how much it means to me 🙏🏼
That looked awesome! Great video Darrin! SKOL
It look damn good to me.
Nice bird Darrin. Glad you are feeling better!
Thank you Kent! Feels good to be feeling good! 🔥
Thanks for sharing. Hope you get better. I'm in the same boat. Had the vid last week. Ha.
Darrin,
Absolutely love your videos man! They are easy to follow and i have always loved any seasoning you have recommended yet. I was hoping you could do a "smoking on a budget" video some time. I know you are a competition guy, but it's just me and my wife eating what I'm smoking so a 20lb brisket or turkey is a little too much. Could you smoke smaller stuff, a turkey breast, a 9lb brisket, ect.
Jed, thanks so much for the kind words! I really appreciate that! It’s funny you say this, because I’m shooting another smoked turkey video Saturday. It’s a 12lb turkey, and I’m strictly using things that are easily accessible at any grocery store, no special seasonings or anything like that. I do have a turkey breast video on here from last year, but I’ll definitely try to get another done in the future! Thanks for the great suggestion and I’ll see what else I can come up with! Great idea my friend!
Was cool to hear Dan Arnold give you a shout out on the BBQ Central Show this week.
I saw that, Dan is a great guy and I'm very fortunate to have such wonderful people supporting me!
I've been looking to spatch a turkey this year, thanks for sharing and then showing the butchering
Bought a 18 pound Turkey, checked the smoker, checked the Turkey…became obvious it wasn’t going to fit in the smoker so my family told me to buy a bigger smoker to cook them a Turkey. I’m canceling thanksgiving, these people are the worst.🤦🏽♂️
Hahahahaha! Oh man, this made me laugh so hard!! But hey keep them around if they’re encouraging you to buy bigger! Lol!
You should passed a hat around to raise money for that bigger smoker lol
Definitely made me laugh and can relate 😂
Daren love these videos I’ve even got my brother in law watching, I’m doing something a little bit different I’ve got the Green Mountain Jim Bowie that has a rotisserie attachment that can handle 15 pounds bird .
Thanks for the kind words! And man, a rotisserie would be awesome! I’ve always wanted to cook a rotisserie bird!
love that color. looks like a smoked BBQ bird supposed to look like. not like an oven roasted bird. going to try that brine for a turkey soon.
Love the videos. I am new to pellet grills. I want to get an assortment of spices and rubs from SuckleBusters. But, there are so many. I am going to order the 6 pack bundle. Could you tell me 6 that I should keep on hand? Thanks
Sure thing! Here’s my recommendations in no specific order:
-Ash Kickin’ BBQ Honey Chipotle (my rub)
-Tailgaters BBQ Party Rub
-Honey BBQ
-SPG
-Campfire Steak
-1836 Beef Rub
Hope this helps!
Love it! Came straight to your channel, to get me all the way together today! Quick question, I notice you have a pan underneath the grates to catch the juice. I've never tried that! Do you think it's safe to use on a Pit Boss? Like, how does it balance so well?
Thats not a pan, that’s a foil liner for the drip tray. Traeger makes them for their cookers 😁
I finally got the party rub. Got a 6 pack of different seasoning. It was $69 . Saved a little. Can’t wait to try the party rub. Even came with a suckle busters t shirt lol
Haha, wear the shirt proudly!!
Great video, what pan is that your using under your grates ??
Thanks so much! That’s just a foil liner that Traeger makes.
What flavor wood are you using for this cook? Keep putting out create vids. Thanks
Probably cherry, I don't remember lol
I was on a plane from Seattle to Chicago last week and swore it was Darren next to me. I almost asked haha.
lol definitely was not me sir. But that’s funny
@@AshKickinBBQ i kept trying to figure out ways to bring up bbq or what he did for work. Hahaha
@@BradPow haha that’s so funny man! Nice to hear I have a doppelgänger out there!
Where can I get the seasoning you're using?
As stated in the video, links are in the description.
I'll smoke a brisket but for some reason the turkey makes me more nervous than that did haha
Haha man, it’s just a big chicken. Approach it with that mindset, and you’ll be golden! If you’re looking for a more traditional style bird…this Sunday I’ll be dropping a turkey made with things most folks have in their home, or can get from any local grocery store. I’ll make it easy as pie 🔥
I used the Area 51 Turkey Brine this year. Fantastic! Only thing about it though, is you can't make gravy out of the turkey drippings. Mine turned out wayyyy too salty! The gravy was delicious otherwise. Just too salty.
Vikings Bills game by chance?
Haha yessir…I’m a Minnesota boy, couldn’t not finish that game! 🏈
Do you think it would make a difference if you spatchcocked the Turkey before you brined it? I don’t use the spine for gravy.
Nah, shouldn’t make a difference at all. I just like to do it after so it stays together in the bag nicely 🔥
Thanks. What pellets do you use and what kind of meter probe is that?
@@nxstng7325 the pellets I used for this was Cookin’ Pellets Longhorn Blend. To be honest, poultry absorbs smoke so well you could use whatever (in my opinion). It’s a MEATER+, and I have a link for it in the description 🔥
What was the cook time for this bird?
Went over it in the video. Your time will be dependent in the size of your bird, but it’s usually around 2.5 hours. All they said, go by temp.
Darrin,
Along with other commenters, I also really enjoy your videos. Keep up the great work.
I have a turkey with 8% added solution. Is there too much salt involved to brine this bird?
I’m sure getting a fresh turkey would’ve been better.
Thanks again,
This one in the video was also 8% solution, and wasn’t too salty. I’d run it 🔥
I'm the poor sap who thought letting his wife choose the turkey would be a good idea. I'm smoking a 23lbs turkey for 10 people 😭😭😭😭
Lol!!
Will Duck Fat Cooking Spray work as well as Vegetable oil spray ?.
Yes
One other thing I wanted to ask, would it work just as well to cut the backbone out and flatten it out first before soaking it in the brine?.@@AshKickinBBQ
@@RM-ks8pp yes, but leaving it whole helps keep it together during the brine.
Thanks!!@@AshKickinBBQ
