last year was the first year that I cooked Thanksgiving for my family all by myself. I used her green bean casserole , gravy , cranberry sauce, sausage stuffing and even pumpkin pie moose shooters for dessert! everyone was so impressed and I plan to do the same this year.
I agree completely!!! NOTHING tastes even remotely as good as real home made gravy!!! AND as an added bonus....you get to eat all those crazy delicious roasted veggies after they cook in the drippings to make your stock!!! THAT is a meal in itself!!!!!!
I agree I won't eat a roast without homemade gravy what's the point in making the effort to cook a roast and then use instant gravy don't make sense to me.

I watched a few turkey gravy recipes here on YT including this 1. The 1 thing that I add that no 1 else added was milk. Whenever I make a light colored gravy or cream soup, I add a cup of milk 2 the roux and then expand it further with my homemade stock. It gives it a creamier look.I usually simmer the neck bone in a sauce pan 4 stock & use it in the gravy along w/ the seprtd pan drippings & maybe some water.
I blown away by how you made this oven roasted stock recipe. Love the Gravy recipe all together! I will make this tomorrow and then finish on Thursday with the Turkey drippings as you described! Thank you for a new take on this delicious Gravy! Happy Holiday Laura and Family!
12/23/22: This is the ultimate gravy recipe, I followed it to the letter, and you don't have to just do it for Thanksgiving, anytime will do! @eliiike yes you can. i dont have a stock separator and i still manage to get great gravy out of it. the flour is essential id say. it makes the fat and the stock mix and creates a homogenous gravy.

You use the gravy to moisten your meal. It's necessary if the meat was cooked really dry, but it's still great with moist meat, and for putting on potatoes. People in my family like to put gravy on all parts of their thanksgiving meal, including the meat, potatoes, and steamed veggies. It's like pure liquid awesome :D
Great Video ! I would of never thought to make gravy this way but I can see it will come out great. I need a gravy for things I cook that have no drippings to make gravy like meatloaf or mash potatoes, stuffing etc... and would like to freeze the rest in small containers to use later use. Although it takes a long time, this was the first time I actually made gravy and a good gravy to boot. I probably should have used less rosemary, but my family loved it. I used the gravy for chicken and biscuits. :D
what do you do with the roasted vegetables? throw them out? I would grind it and put it in my stuffing so before you roast clean the vegetables so that you can reuse them.
The turkey juices she is referring to came from the roasted turkey she made in another video. She used chicken here in this video to make stock. Mixed them both together to make gravy.

Awesome!!! I love making food from scratch... I also make beef stock... from bones of course, from grass fed organic... such a difference... Roast the bones for a couple of hours on low temp, then into a pan/pot w/water (rain water or distilled really pulls the minerals out of the bones)... Chicken and/or turkey does the same thing... I chill the stock and the fat separates... Carry on, the same way as your video :-)

Part 2: This time I didn't need 2 add chicken stock. I filled 3, 16 oz. containers w/ pan drippings so I have plenty @ hand. I roasted the turkey on top of carrots, onions, celery, garlic. I never salt the bird, just use oil. Salt dries out the bird.
Standard procedure for making a proper gravy :) Among the herbs; just a few stalks of lovage cooking in the gravy in about 15 min. before completion is very nice. But to really make your gravy glorious you must use an "acid" component for taste-amplification. A "french gourmet "secret" called "gastrique". It's a "syrup" from melting sugar and boil/reduce it with e.g. vinegar, balsamico or cyder etc.... It's epic ;)
you use a fat separator - the fat rises and the broth sits on the bottom. The spout for the separator is towards the bottom so you can pour off the broth easier.
If he roux is cooked to a decent peanut butter color for several minutes it turns out beter yet! And esp when giblets have been cooked in however and on a VERY low heat for a long time beter flavor and all yet again and gravy very smooth
