Chocolate Chip Muffins, Tim Hortons style ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ - Preheat oven to 425F - Grease muffin tins, include top - Dry Ingredients, whisk together: - 2.5 cups (375 grams) AP flour - 1 tbsp baking powder - 1 tsp baking soda - 1/2 tsp salt - 1 cup (200 grams) sugar - Add 1 cup of mini chocolate chips to dry ingredients, mix - Wet Ingredients, beat together with hand mixer: - 1/2 cup (114g) soft butter - 2 large eggs - 1 cup (116g) buttermilk - 1 tbsp vanilla extract - Add dry to wet, fold until *just* combined - Spoon batter into muffin tins, muffin liners optional, full and slightly rounded on top, not directly next to another muffin - Sprinkle the tops generously with course sugar and chocolate chips. Work quickly! - Bake at 425F for 5 minutes ONLY - Lower temperature to 375F and bake for an additional 12 minutes - Will be done when a toothpick comes out clean - Top with more course sugar and serve!
I need a solution to buying Tim Horton Muffins once a week for my kids, these turned out great and will be my go to recipe because it took minutes to incorporate everything I used milk and vinegar because I no longer buy butter milk when I can make it for cheaper. Hi I'm one of the lazy viewers who'd try the recipe but will be too lazy to comment and give feedback BUT this recipe is so so so goood that I just had to tell everyone to try this and bless themselves with the best muffins. One change I made to the recipe was that I made banana chocolate chip muffins. I added mashed bananas to the wet ingredients and voila ! had an amazing time baking and having these wonderful, soft, moist muffins :)))))
Oh MY!!! 😍 These are just cooling off, and are oh so tasty! I used muffin liners and wasn't sure about the hand mixer part (Yes, it helps... even if the butter isn't totally softened. Better than hand mixing.) Yes, need to work quickly once portioned out ... and divided into mounds...ish. Had everything ready at hand. A nice crunchy top edge. Visually it looks like a Timmy's muffin with the Sugar in the Raw on top and extra mini chips, but they use a taller type of liner... but this recipe saves me the urge to swing through their drive through now that I can pop these out of the freezer when wanted! Thank you! 💕
I made these!!!!! It was my first time making muffins and I scowered the RUclips videos for the perfect recipe. Usually when I make stuff for the first time it doesn’t turn out. I did have to add about .5-3/4 cup of flour to get the consistency that you did. But they turned out amazing!! And moist!!! I watched them bake the entire time I was so amazed they where actually rising and not just running off the muffin pan like my cookies run 😅😂 thank you!!!!!!

Hi Sharon, and thank you for this really good recipe for muffins. I made a batch last evening and they turned out perfect. It will be my go to muffin recipe from now on. Although you called for chocolate chips, i used the same amount of frozen blueberries and I folded them into the batter just before filling the muffin pan. I believe that cranberries cut in half and tossed in a container with a sugar/cinnamon mix to coat them would be very good as well. Pretty well any fruit chopped a bit would work as well. For a topping, I sprinkled a mix of brown sugar and cinnamom on the tops immediately when I took them out of the oven ( because like you, I forgot to do this before they went into the oven). My wifes fault because she was eager for me to get them baked 😂😂
If you wanted to try some cocoa you could but you would need some added sugar as well to off set that and possibly little more butter because the cocoa would be bitter and make it more dry.hmmm ..let me know how it works if you try that .

Not in this recipe .. also ..you could melt the butter if you wanted to but it should be cooled off if you do that :)
