      Thanks! The fish is on a little bed of spinach with some turned courgette, celery diamonds, carrot ribbons and tomato strips. All tasty but adds a bit of colour to the dish!

      Any sort of acid will do!

    I committed a lot of mistakes making this difficult sauce. It often splits.

      don't let it get too hot, remove it from the heat if you have to

      I had to watch this back to make sure, as it's been a few years since I made this video! But I gotta tell you this is spot on. But everybody has different preferences so if you do like your more the consistency of mayonnaise then just keep whisking in more butter until its as thick as you like it! 👍🔥

      @@Al.Brady. I tried doing it but the butter got separated ( I can see oil and some milky parts ) TTTTT any suggestions how to fix it ? I dunno what I did wrong

      @@ayasera_9501 Well if it looks oily and you can see the butter milk you have probably over heated the sauce! If it gets too hot it will split! You have to whisk it over a very low heat just to melt the butter while you whisk it constantly to keep the sauce emulsifed. Don't let it boil or get to hot or the butter will melt to much and the balance/emulsion will break! Hope that helps! 👍

      Yeah! I mean who has ever heard of a wet sauce? Those dry sauces don't get enough credit in my opinion.
