So calling it “garlic aioli” is just dumb. However, in the US, they just make mayo with garlic and call it garlic aioli cause it sounds fancy for people who don’t know what it is.
You could make something similar at home pretty easy. Soft scramble turn the heat low and use a silicone cake spatula to constantly scrape the pan...easy

Yeah they sell egg sandwiches just like this at a spot in vegas too and they added to. their menu because the owner wife is korean and they wanted to bring some of home street food to vegas with an american twist. These sandwiches are really good.

I know it’s probably a bit different in the lower 48, but here in Alaska, a dozen quality, free range eggs, is $12… add the butter, brioche, chives, cheese and any decent possible meat, and you’re $10 down per sandwich. Add in employee pay, rent, equipment, etc…. $30 doesn’t fall short for what you pay for… argue that
