I’m one week into my AIP elimination phase & your sweet potato bowls have gotten me thru! I’ve also been doing 2 tbs of coconut flour soaked overnight & it’s kind of like cream of wheat. For both I use collagen peptides for added protein. As far as meal prep I’ve been prepping protein, baking sweet potatoes in my air fryer & am getting more kitchen tools like a mandoline slicer to make all of the chopping easier. I’ve been super unmotivated to cook, mostly due to depression, but I’m hoping the elimination diet will help me figure out which foods are impacting my energy & mood.
Thank you for sharing your update! I will try the coconut flour soaked - like the sound of it. At the top of this year, I felt so overwhelmed with meal prep so I started real slow. As I cooked more, I got faster and it became more fun/therapeutic especially paired with Jazz/Bossa or my fave podcasters. On the other hand, I fully understand that some days or weeks it just ain't happening 🤪

Hi there! I go for about 8 oz of coconut water, 1/2 frozen OR full ripe banana, 1 cup spinach, 1/2 tbsp chia seed + whatever the serving size is for the pea protein powder. You can add a few ice cubes if you prefer really it really cold or a couple tablespoons of greek yogurt if creamy is better. That should help a bit and you can find the consistency you like!
