    Years of reading and watching videos, this is the first time I've ever heard anyone explain that powdered pectin can break down. Thank you, Linda.

      @@LindasPantry oohhhh. So I might be cooking my jelly or jam too long , before putting in the jars? I'm wondering if I add the pectin in the last minute of boiling, it will not break down .

    The awh shit at the beginning had me chuckle. Lol
    Every time I use liquid pectin it fails! I only have success with sure-gel.

      I only made jams so far, still need to buy a pressure canner. So sure gal is the only brand and type of pectin I have seen in the stores.

    First off I love the beginning of this video. My Oregon grape jelly didn’t gel up right so my way of fixing it was using it as a soda syrup. I used soda water added some syrup mixed up well and poured it over ice. Very very good

    I had a fail with powdered pectin but don’t want to add more sugar, it’s already too sweet! They just call for too much sugar and you have to add more to remake it. Since we have cut down on sugar in our diets, they just taste too sweet. I’m going to try Pomona’s Pectin (low to no sugar) to remake mine. Wish me luck.

    Thank you so much for explaining about the powdered pectin and how it can fail if cooked too long! I have never heard that before.

    Thanks Linda. I made 6 jars of blackberry jam and it set still warm in 10 mins fgs.
    I just used berry's and sugar no pectin. I always undercooked or 9vercook the berry's. 👍

    Thanks! Good to know that the canned goods can be saved if they don't turn out quite right, and good to know that the liquid pectin is better.

    I love how the timer goes off and you say, “Oh shit!” Lol. My kinda jammer!! So, recently I had the same thing happen and I dumped it back into the pot and added pectin/powder…….but, I didn’t want it any sweeter so I refused to add any more sugar. Well, I’m sure you can guess what happened. Yes, another fail. Luckily, I found out that you can add a tiny amount (anywhere from 1/2 tsp to 2 tsp) of non flavored gelatin powder to each jar individually or more (adjust for your particular amount) for a whole batch (stir well) and just heat it up for a couple of minutes in the microwave and voila. It’s jelled. It definitely works. Now, from your video you mentioned liquid pectin and I’ve never used it before. However, since you said you like it better than the powder…. I’m going to try it out on my next batch. Thanks for your advice.👍🏻

    Lemon juice is acid. It lowers ph. Not sure why this works if it’s only ph dependent.

    I rebatched my sweet onion jelly. I didn't add any more acid to it, because it had ACV in it already. I hope I didn't make a mistake not adding more.

    I made raspberry jelly today. Powdered pectin and it didn’t set. I did the cold plate and it didn’t move.☹️ So I emptied all the jars and heated the jelly, added another cup of sugar and got it to a full boil. Reduced down some more. Waiting for them to cool now. 🙏🏼

    Sometimes you really crack me up, LOL! Jam fails happen to us all at one time or another. I have never had good luck with liquid pectin, though!

      Carol Avant hate all pectin, I honestly never use it. I’d rather not make the jam or jelly if it requires pectin to set.

      Why do you dislike it? I'm trying to learn all I can about this. Is it a taste, texture, health issue?

      Rhonda King I’ve not had any real success with the powder and I do not like the taste the liquid gives. I’ve even tried making my own liquid pectin but I didn’t find it any better. To be honest most most of the jams and jellies I want to make just don’t require it, it may take a little longer to boil and you may not get quite as much yield but I’ve not had a fail this way. Your jam also may be a little darker in colour. All in all it works for me! Happy canning 🤗

    I just started canning and I’m be tried both powder and liquid pectin and I still haven’t had a batch thicken. What else can I do to fix it?

    Can you cook all your fruit to the right point of brake-down and then add in your pectin and sugar?

    Now that you've said you've had a harder time with powdered pectin vs liquid pectin I have come to the realization so have I! I need to stop buying the powdered stuff it seems.
    I made 2 different jellys last night and neither one has set... could have been my aging pectin too. Idk. Anyways, I do think I will go through the effort of redoing them

    I used the liquid pectin with muscidine grapes to make a jam. But it didnt set. My jellys/Jams usually always set when I use powder pectin but never with liquid pectin. I would love to know the difference between the two and when it is better to use one over the other. I never knew that powered pectin wouldn't set if cooked too long. Thank you for this video and useful tip. I'll keep that in mind when I'm using fruit that needs to cook longer.

    I've had a fail and did exactly what you did. Went by the directions and re-canned. It came out the second time.

    Could you cook the plums ahead of time, let them cool to room temp then add lemon juice, sugar and pectin and bring back up to temperature prior to canning? I realize it's more time consuming but so was starting the process all over when it didn't set.

    Reprocessing jam today! No pectin recipe I seen in a video my assumption is that there wasn't enough sugar. Went well enjoyed this video at the same time 😊☕💖

    How long did you let your jam sit before deciding that it didn't set? I have had jams that took a couple of weeks and finally set.

    I'm new to canning so my first batch of pineapple jam was a hit (Noreen's Kitchen recipe) but later I tried a grape jelly from juice and the sugar crystallized up the inside of the jar. Not sure what I did wrong but I haven't canned since.

    Dear, I never cook jam or jelly. So, is that necessary to use pectine?? Is there other kind of pectine than powder pectine?? Is that better??

    Made cherry jam and it didn't set up, sooo it is cherry ice cream topping. It is good.

    My grape jelly failed to set up. I’m just using it anyway. It bleeds through the bread on sandwiches, but who doesn’t love that “sloppy jam” thing? :)

    Do you know if different varieties of peppers used (with their varied capsaicin) affects the ability to gel?

      I can a lot of pepper jellies and jams each year and the peppers Do make a difference. I’ve also had jellies and jams seem to fail but would have to sit on the shelf for several weeks before they set. Some of my recipes actually say to wait 4 weeks before use and I did find that to be true about some. 🤷🏻‍♀️ So if I’m making pepper jelly for gifts I make in Oct for Christmas, just in case. 😊

    I made crabapple jelly yesterday using liquid pectin & sugar…..´it did NOT SET.
    Do I add more sugar (how do I determine the amount), liquid pectin & more lemon juice. I used lemon juice from the squeeze lemon, not fresh lemon juice. HELP

    I just made red pepper jelly for the very first time. I was very intimidated. I have made all kinds of jams and pickled beets, so I am not sure why I was nervous. Anyway, my first batch set nicely, but unfortunately my second and third batch did not set. They are like water. I am so discouraged. I have to remake it. Thank you for explaining snap lids. I will buy more to replace them. I used powdered pectin in one batch and liquid pectin in another batch. Liquid seems to be the favourite. I did not use lemon juice, should I have?? Any tips would be helpful. I am a brand new subscriber to this channel and have already learned something. THank you Linda

    Yes mam! My apricot jam failed as well. I recooked it, added more powdered pectin and sugar...it worked. But!!! I didn’t know about the acid bit! My jars sealed just like normal...am I safe??? 🌷🚍

      Same here! I will reprocess my jelly by adding more sugar. But thing is it already had the max amount of sugar, plus I even added a little extra.

    Nice video, thanks, Linda. I’ve had problems with plum jam in the past, 😳 maybe the plums are the overall culprits, too, 🤨 made worse by powdered pectin. 😂
