Tailgate Strip Steak Sandwich Recipe
3 NY Strip Steaks - 14oz ea
1/4 cup Worcestershire Sauce
1/4 cup Killer Hogs AP Seasoning
1/4 cup Killer Hogs Steak Rub
1 yellow onion - thinly sliced
1 red bell pepper - thinly sliced
2 Tablespoons Olive Oil
2 cups Tailgate Cheese Sauce* (recipe below)
1/2 cup Chipotle Mayo* (recipe below)
8 fresh ciabatta rolls
Directions:
1. Prepare a charcoal grill for direct heat grilling.
2. Cut the onion and bell pepper into strips and season with olive oil and AP Seasoning. Place the vegetables in a 1/2 size aluminum pan and set on the grill to saute. Stir often and remove from heat once vegetables begin to soften and brown a little.
3. Season the NY Strips with a little Worcestershire first then AP Seasoning followed by a generous coat of Steak Rub.
4. Place the cheese sauce on the side of the grill just off the coals to warm.
5. Grill each steak directly over the hot coals about 3 minutes on each side or until the internal temperature reaches 125-130°F. Remove from the grill and rest for 5-7 minutes.
6. Split the ciabatta rolls in half and grill for 20-30 seconds until brown and toasty.
7. Slice the steaks into thin strips.
To assemble the sandwiches:
1. Spread chipotle mayo on the bottom bun and layer on the slices of strip steak.
2. Add the peppers and onions then top with the warm cheese sauce.
3. Place the top bun over everything and enjoy!
Tailgate Cheese Sauce Recipe
1/4 cup butter
1/4 cup flour
1/2 cup Miller Lite
1 cup heavy cream
1 heaping teaspoon spicy dijon mustard
1 teaspoon Worcestershire Sauce
1 teaspoon AP Seasoning
3 cups shredded cheddar cheese (hatch green chili cheddar is what I used)
pinch cayenne pepper
Directions: Melt butter in a small saucepan and add flour. Whisk to combine flour and cook for 2-3 minutes. Whisk in the beer, heavy cream, spicy dijon, and Worcestershire and bring to a slight boil and reduce the heat to low. Add the cheese a little at a time, constantly whisking for smoothness.
Chipotle Mayo Recipe
1 cup Blue Plate Mayonnaise
2 chipotle peppers in adobo sauce - finely chopped
1 teaspoon Worcestershire Sauce
1 teaspoon Killer Hogs Steak Rub
pinch of cayenne pepper
Directions: Combine all the ingredients in a small bowl and store in refrigerator until ready to use.

Probably would be better to do this on sliders or rolls so its easier to manage with one hand and goes down in a few bites. Would probably be less messy. I mean if youre trying to tailgate, a whole ass sandwich on stiff ciabatta bread is not ideal.
Maybe I'm old fashioned, but I would have preferred this video be twice as long with not as many fast cuts.
IMPORTANT!: Bud Light can NOT be substituted for the Miller Lite, called out in the recipe, for the cheese sauce. Bud Light will introduce a very off-putting “transy” flavor to the sandwich which most people find very nauseating. If only Bud Light is available, look around, you may be at the wrong party. 🧚♀🧚♂

This is a great recipe, but that A.P. is SALTY. Never looked at the ingredients, did so tonight, full of MSG, salt enhancer. Use it sparingly or skip it all together in my opinion. For the most part, your rubs are killer, but your gonna put somebody in the dirt with that one.
I just make my own. 4 parts salt, 2 parts garlic, 1 part pepper. Easy peasy.
@@jasonbarker5154I do 4 parts pepper, 2 parts kosher salt and 1 part garlic for most of my pork and beef slow cooks. Also have to agree on the AP rub. It has 2-3 times as much sodium as most other AP rubs. That’s the only one I’m not keen on using. I LOVE the hot bbq rub though.

I wish there was a way for me to find some hatch green chili cheddar cheese. Ever since leaving NM I've wanted some and the closest I can find is either poblano or anaheim. Just not the same.

I love steak on ciabatta. my fav way is horsey sauce on bottom, loads of strip, caramelized onion, a little arugula dressed with some nice olive oil salt + pepper, then roasted red pepper sauce on top
