  • Matar Paneer Pulao Recipe | Celebrating Our Lady of Snow Feast | Welcome to my kitchen! Today, I'm sharing a special recipe for Matar Paneer Pulao, made with Amul Paneer-our family's trusted brand. We're celebrating the Our Lady of Snow feast in our village in Goa. I just returned from mass, and it's already 12:30 PM, so let's get started quickly as I'm short on time!
    Ingredients:
    300 gm Amul Paneer
    1 kg Basmati Rice
    1 cup Green Peas (Matar)
    3-4 tbsp Oil
    2 tbsp Ghee
    2 tomatoes chopped
    3 large Onions (finely chopped)
    2 small Capsicums (finely chopped)
    1 cup Curd (Dahi)
    1 cup Green Coriander (Hara Dhaniya)finely chopped
    1 tbsp Red Chili Powder
    1 tbsp Turmeric Powder
    3 tbsp Garam Masala
    1 tbsp Coriander Powder
    3 tbsp Ginger-Garlic Paste
    2 Green Chilies
    2 Bay Leaves
    1 tbsp Black Pepper
    3 Cinnamon Sticks (Dalchini)
    1 tbsp Cloves
    2 Cardamom (elachi)
    10 Cashews (Kaju)
    Salt to taste
    Procedure:
    Start by washing 1 kg of Basmati rice and soaking it. Cut 200 gm of Amul Paneer into small cubes and soak them in lukewarm water for 10 minutes to make them soft. After 10 minutes, remove the paneer from the water and add 1 tsp of red chili powder and 1 tsp of turmeric powder. Mix well and set aside.
    Next, heat some oil in a pan and lightly fry the paneer cubes. In the same pan, add some oil and 2 tbsp ghee. Once hot, add 3 large sliced onions and 2 small finely chopped capsicums. Fry them until golden brown. Add 1 cup of curd, 1 cup of chopped coriander, 1 tsp turmeric powder, 1 tsp red chili powder, 3 tbsp garam masala, 1 tbsp coriander powder, 3 tbsp ginger-garlic paste, 2 green chilies, and salt to taste. Mix well.
    Now, add the soaked rice, 1 cup of green peas, and stir everything together. Pour in enough water to cook the rice. Cover and cook until the rice is fully cooked. Finish by garnishing with fried cashews
