Today, we’re making it with juicy chicken leg pieces, perfectly marinated and cooked to perfection. I’ll guide you through each step of the process, from marinating the chicken, preparing the rice, to frying the onions and cashews for that perfect finishing touch.

For Marinating Chicken:
2 full chicken leg pieces (with deep cuts)
2 teaspoons ginger-garlic paste
1 tablespoon biryani masala
1 ½ tablespoons coriander powder
1 tablespoon cumin (jeera) powder
Salt to taste
1 Maggi cube (veg or chicken, optional)
• 1 lime juice
For Biryani Rice:
2 cups of basmati rice (½ kg)
4 cups water
4 tablespoons chopped coriander
4 tablespoons chopped mint
3-4 Maggi cubes (veg, optional)
Salt to taste
For Frying:
3-4 tablespoons oil
3 medium onions (thinly sliced for crispy onions)
Handful of cashews (for roasting)
Whole Spices:
1½ star anise
4 large cardamoms
11 black peppercorns
10 cloves
2 large cinnamon sticks
Other Ingredients:
3 medium onions (sliced)
1 slit green chili
1 finely chopped tomato
