I think each system has it's own advantages. With ur system of smaller markets I think everyone feels they get a share of the pie but with one big market for just one region the others may also feel left out. All in all I think they are both good ideas in their own rights.

love it, these markets should be everywhere, in Asia and China it's normal to see indoor markets like this, in the Philippines, there isn't a town you go that doesn't have either a mini indoor market place like this one or a big one, stopping the people from selling on the dirty streets should be any government main priority, and its more clean looking and better for the hygiene of the food being sold, I believe that every country in Africa should have their markets indoors or at least have good stands made from either wood or cement that the people can use to put their products on, good job, nice video quality.

A 2nd one between Kisumu and Busia (to even serve likes of Uganda, DRC, Rwanda etc.). A 3rd one in Kapenguria/Isiolo, for livestock. Lastly expand the Karatina one, for fruits and vegetables.

The 2nd phase of this market is bigger than the existing one. And there is a third phase which is slightly bigger than this current one.
Note: Kumasi is the commercial Capital of Ghana so the entire City is more like a market place. And it's also the Cultural headquarters of Ghana so Kumasi experience is far different from Accra.
If you want a city that have the feel of Accra then I will recommend
    Tema and
    Takoradi for you.
But if you want a city similar to Kumasi then
    Tamale and
    Techiman will do.
