Sharing a Traditional Teow Chew Cuisine - Braised Duck, prepared by a neighbour and close friend, Regina Tan. Please find Ingredient List below.
Ingredients for Regina's Teochew Braised Duck :-
1 duck (Vegetarian Duck preferred) approximately 2.0 kg
3 tbsp of salt for cleaning and seasoning duck
For Stewing (Total about 60 minutes)
3 tbsp of Sugar (for carmalising)
10 cloves of garlic with skin on
10 slices of Galangal/Blue Ginger
5 spices comprising 1 cinnamon stick, 2 star anise and 2 cloves
½ a seed of Black Cardamon
1 tsp of mixed spice powder
4 cups of water (300 ml per cup) Total : 1200 ml
160 ml of Soy Bean Sauce, Golden Swan Brand
1 tsp of Sesame Oil

我在40年前有人教我魯鴨子,最特別的是在鴨肚子塞滿蔥約一斤半的蔥,只有好的醬油冰糖薑,煮3個鐘頭裡面的蔥比鴨肉好吃。

Jika di Penang, dalam purut itek mereka sumbat.. Bawang besar 1.biji ,lengkuas 3.keping ,halia 3.keping dan bawang putih tumbuk pecah 3 biji,, shao xin wine, bunga rawang 3 biji dan bunga chinkey 3 biji, dalam kuah kamu boleh campur Sos tiram,, maltose atau honey 1.spoon ..ok.
解释得很清楚。建议鸭子用烧水川烫,去腊。

Thanks for sharing this ‘chau chow’ duck. As I live in Europe, Asian spices are not easy to find, there are some other spices which are different from those from Asia, like black cardamon you mentioned, we have cardamon, but not sure if it is black cardamon, how many types of cardamon exist in the world? 😇Could you please explain those different spices in another video? Thanks and good luck in next posting. 🙏

多搞两片甘草和半个罗汉果,汤更甘甜也比较解毒。南姜看起来不太像哦,南姜应该是红色的皮。最好也加一片陈皮,有清香味。香菜籽也要,还有两勺鱼露。

The duck mouth is very SLIMY must squeeze out the mucus n wash with salt fit a few times
The duck legs are NEVER smelly for the protective skin were got rid off

Rina 姐 把鸭子的头都不要了吧。
Inside duck stomach add in half teaspoon of Soya pest (tau chue)
鸭子没卤入味,肉白皮己黑。用卤汁浸泡一晚最佳。
卤鸭当然是浸过夜入味,如果煮入味,早就烂掉了。。。
豆干要炸才会更好吃

Hi I'm a bit confused with your cooking time of 55 minutes. How many minutes on breast side and how many minutes on back side?
Breast side 20+15,turn,add water,pour gravy inside,back side 20. But I think the fire was on more than 55 minutes,it was on when she poured the gravy.
