Pretty sure they roast them first and then salt them and leave them out for a while before packaging. Pretty sure atleast. Let me know how you go with the recipe

I actually watched a documentary last night on CBC The Nature of Things that indicated that it's likely the noise on airplanes that impacts our ability to detect flavour (both salty and sweet) while in flight - who would have guessed!? Apparently, our brain's focus on the noise detracts from our sense of taste. This gentleman indicates it's the lower humidity, which I imagine could also be a factor. Either way, looks like making things flavourful for airplane food would be very tricky!

I remember the only meal I ever had on a plane was frozen in the early 2000s on Delta airlines. It was one of them frozen dinner meals you heat up in the microwave. They gave it to me with the plastic still attached. It was actually delicious. Now all, they give you is a small snack and a mini complimentary drink on economy.

The reason why he put so much salt is because when you ascend 30,000+ feet in the air, your taste buds become dull. lSo when you eat something that high up its tastes bland so they put lots of salt, herbs, and other types of spices so that i will give it flavor and it wont be as bland as before. (this was airplane food, of course.)
