We made them! They came out fantastic! Almost every single luchi puffed! And they were super flaky! Honestly the best batch I’ve ever made! (I’ve made them many times but never had such an exact and clear recipe with measurements. I used my food scale and the measures were so accurate! My physicist Bengali husband (right there a synonym for “fuss budget”) was truly impressed! I have photos!
I want to thank Bong Eats for saving my soul which is stranded in the UK amidst this pandemic. I made this for dinner today and this time I followed all the measurements and the luchi not only puffed up but it just melted in my mouth. This is the first time my attempt at making luchi has been successful! :) I also made the street style alur torkari with chickpea to accompany the delightful luchi. Thank you for bringing my country closer to me amidst all this.
If someone is interested: we had difficulties to roll the dough as thinly as it (probably) should be so I used the classic pasta machine. I started at the mark 4 and proceeded to 2 or 1 in order to obtain a round shape. The thinnest pieces (mark 1) became very crunchy but didn't puff up. The slightly thicker pieces (mark 2) became almost perfect luchi.
Rolling the perfect luchi certainly is a skill and I was fortunate to learn it from good teachers. I don’t know how long it would have taken if I were on my own. Also there is a tortilla maker that I wonder about. Have you seen those? It’s just a simple flattening device but highly effective.
There might be multiple gadgets that can make the dough flatten to the desired shape...however, I recommend using the rolling pin... Once muscle memory develops, it is actually faster 😃

Wonderful videos! As an amateur cook living away from home, I now have the confidence to venture into the world of Bengali cooking, because of the way you breakdown even the most complicated recipes. Just one very small suggestion- as a beginner, sometimes I find it difficult to figure out what degree of flame or heat to use, for the different types of frying, braising etc. While some of your videos mention it, some don’t. It would be helpful for amateurs like me! Keep up the amazing work :)

Many Bengalis do not understand the necessity of standardisation and they prefer the trial and error method. Whats so wrong about standardisation, I wonder! I have shared your video on Facebook. BTW, though the background score for this one is fabulous, why don't you experiment with similar stuff for your other videos? mostly you have repeated the background music - which is sort of boring... :D You can produce excellent results there. Tried it today morning and messed up with the quantity of oil while making the dough :-( Gave a bit too much and the luchi turned out to be brittle...'moyan' beshi hoe geche...alas, ultimate luchi still eludes me...*sigh* !
Sorry to hear that, Abhishek. If possible use the exact weights given? Also, make sure the oil is very hot (195-200 degree C). Luchi requires hotter oil than other deep fried food. All the best!

Tried it today morning and messed up with the quantity of oil while making the dough :-( Gave a bit too much and the luchi turned out to be brittle...'moyan' beshi hoe geche...alas, ultimate luchi still eludes me...*sigh* !
Sorry to hear that, Abhishek. If possible use the exact weights given? Also, make sure the oil is very hot (195-200 degree C). Luchi requires hotter oil than other deep fried food. All the best!

Luchi looks easy but it's the most trickiest bread to make. My grandmom made it best everytime.
I knew how to knead flour long back but now after seeing your video,not this one but some other one I guess,I coated the dough with oil after kneading.....and my mom applauded the very soft and tasty luchis.... although I didn't make the luchi,but I coated it on your advice.....so ya,thanks and looking forward to cooking more.... although I don't cook at all,but still I would love to cook following your videos😍😍😍😍😍😍
