I think your process for making both butter and sour cream is the best and most attractive way I've seen on RUclips. Definitely think I'm going to give that one a go.

I swear your fully trimmed brisket is second to NONE man. It's such a damn sleek, clean job and nobody's comes close. And I watch just about every damn BBQ channel on the RUclipss.
About the video, I'm not a huge baked potato guy but if made this for the wife, yeah...daddy's getting a thank you gift later. Major respect on making your own butter (who TF does that? Lol) and everything.
That was the sleekest brisket that I have seen after it has been trimmed. I thought it was going to take off.
What toaster oven did you use to hold the brisket. I have been looking at using a cheap electric smoker for a warming cabinet, but they are only 18 inches across and I am afraid that it would be too small for holding briskets

My guess is the Breville Smart Oven Air Fryer Pro, we use that one and it can hold very low temps and also can fit a 9x13 inch pan. Highly recommended!

Can you comment on the flavor of the grass fed brisket vs a traditional grain fed? Anytime I’ve had a grass fed ribeye, I’ve noticed a significant flavor difference in the fat, with the grass fed one tasting almost “gamey”. Did you notice anything different?
I prefer grass fed and grain finished. Can not find this anymore.

Used to make loaded potatoes at a restaurant i worked at.... you could get carolina pulled pork, bbq chicken or short rib. A full meal in a potato.....you can't beat it! Love the videos!

When you say let the buttermilk "set at room temperature" ... I live in Florida so my room temp is likely more then yours. Is 80-82 too high and cause spoiling or something? That's where I set my ac in summer

This reminds me the best mashed potatoes I had were ones where I smoked the potatoes, kept the skin on in the mash, and put a smoked cheese sauce into the blend. Next time brisket topping.

You can actually dissolve salt in water and use it on the final rinse. That way the salt dissolves in the butter
