Is there anything special you do with the chunks that get removed when you strain after the 4 weeks? Or is it pretty much just to the compost bin?

Yep exactly. I toss them in my compost. The acv/fermented ingredients is great for the compost bin!

Should we ferment in fridge or just on a shelf?

Just on a shelf or counter, a cool kinda dark location works best! Not in direct light. Then once it's strained after the 4-6 weeks, keep it in the fridge!
