Instant Pot Chicken Noodle Soup

  • Only have 20 minutes to cook dinner tonight? Well, then I have the recipe for you! Break out your Instant Pot!
    4 Cups Chicken Stock
    2-3 Chicken Breasts
    2 Carrots
    2 Celery Stalks
    1/2 Onion
    Salt & Pepper
    Oregano
    Butter
    Noodles (whichever ones make you happy)
    Combine 2 cups of Chick Broth with Chicken Breasts, diced veggies, seasoning, and butter into Instant Pot. Cook on manual for 20 minutes. After setting the Instant Pot for 20 minutes, cook noodles separately in pot on stove top. You could throw in the noodles into the Instant Pot with the other ingredients; however you will need 2 more cups of Chick Broth and it is going to be challenging to shred the chicken when it's all done cooking.
    Now your noodles are done cooking, so rinse them off with cool water so they stop cooking. Keep the noodles in the sink and shred the chicken in the Instant Pot. Dump the noodles into the Instant Pot and stir it up!
    In coordinate with the Chicken Soup, we baked Texas Toast with cheese on top! It wasn't a low sodium option, but it sure tastes good dipping it into the soup!
