Hi, I work as a cook, if you add some water to your onions on the stove and cover it, cooking/steaming them until transparent or almost, then finish on medium/low heat to caramelize. It’s a big time saver and won’t sacrifice flavor.
A tip i learned:
If you have to scrub a lot of produce or eggs, wear a pair of exfoliating gloves used just for this purpose. Works like a charm!
Excellent tip. One thing I do appreciate about home cooks is the freedom to not have to wear gloves or have plain fingernails. As a professional chef I would love to keep my nails pretty but ServSafe values safety over looks. Last thing i need to do is accidently get a piece of nail or nailpolish falls off in a dish that I am cooking or canning.
Here's a few tips! I have learned over the years that the best way to roast peppers is on the grill. Also key is not over- roasting them or you will use a lot of the meat of the pepper. I prefer to keep them whole and chop them if/when I need them. I learned several years ago that once roasted, put the peppers on a parchment-lined cookie sheet and put them in the freezer. Once frozen, take them off the cookie sheet and put them in a gallon sized freezer bag. I do this all season as peppers become ready. When I'm ready to use them, i just pull them out of the freezer and thaw (or you can run them under water if you're in a hurry) and the skins slip right off and the seeds are easily removed. Poblanos, Anaheims and Big Jim are my favorite peppers to grow and eat!
I love seeing you just reach in and grab your veggies off the plant. You see so many sights/videos that insist you wear gloves, “gently” pluck the fruit of the plant off. I just turned 70 today and did gardening and canning for years and never was “gentle” with my plants. Every year I’d can probably over 300 jars of harvest and never had one jar complain how rough I was…lol. Thanks for being real. Love your channel.

hi becky, as a senior woman who knows more than i did when your age, please think about wearing shoes with good arch support. an upturned toe on sneakers helps prevent trips. currently recovering from a partial knee replacement and wish someone had given me this advice when i was younger. get the most comfortable fit you can find. in sw florida with have a store that specializes in "orthopedic" shoes and with the help of a good salesperson you can get sandals too that protect knees, etc. love your work ethic and love of growing and cooking. hugs and love!
100% agree and wonder if I would have the foot pain I have now if I had worn berkies instead of slippers in the kitchen when I did all day cooking event.
The purple means they need potassium. Mine were turning purple too and I found out it means the plant needs potassium.❤

The last few years I have made it my mission to preserve at least one thing every day during the garden harvest season. It is amazing how it all adds up over six weeks.
I have a much smaller garden for this retired lady. I preserve where I can but have committed to eating at least one item from my garden at each meal. Nothing gets wasted here either.

Bekky idk if youre aware but the onion tops have many uses, i looked it up lol cause it was a lot to throw out.
1. Salads: Chop the onion greens and add them to salads for a mild onion flavor and a pop of color.
2. Garnish: Use them as a garnish for soups, stews, casseroles, and baked dishes. They add a fresh, bright flavor and a bit of crunch.
3. Stir-Fries: Add chopped onion greens to stir-fries for a fresh, oniony flavor that complements many vegetables and proteins.
4. Omelettes and Scrambles: Mix them into omelettes, frittatas, or scrambled eggs for a subtle onion taste.
5. Herb Butters and Cream Cheeses: Blend them into herb butter or cream cheese spreads for a flavorful twist.
6. Soups and Broths: Use them in soups and broths for added flavor. They can be used similarly to leeks or scallions.
7. Sautéed or Grilled: Sauté or grill them as a side dish, either on their own or with other vegetables.
8. Pesto or Salsa Verde: Incorporate them into pesto or salsa verde for a unique twist on traditional recipes.
9. Pickling: You can pickle onion tops along with the bulbs for a tangy, crunchy condiment.
I am sure she knows. She made once onion top pesto. But i think she's throwing them away because she has so much.
Hi there! I carmelize onions in crock pot overnite. Fill it up, add 1/2 cup water and turn it on. Low i think is what i did. Reduced and carmelized in am. Give it a try. 😁
I do the same but no water, just butter or oil. Because it’s always better with a little fat! 😁 I let them cook 12-15 hours and, voilà, done! Also, I use my food processor to slice the onions: I do not have the patience to do this manually (either with a knife or a mandoline)
I am amazed at watching how you can cut that many onions and not be a teary red eyed mess like I would be. I'm also amazed that your skill and knowledge is so wide and varied. Gardening to baking to food preservation to party prep. I'm guessing because your mother has taught you alot of what you know.
Some days I watch Becky and feel so accomplished after completing a big project like this, not like I did any of it but i feel like I was taught so much. I truly appreciate her generous nature in sharing her wealth of knowledge. Thank you.

When I lived in Arizona we used Bacas green chilies (I believe they are Anaheim green chili peppers) they are found in the frozen food aisle. When we moved away I couldn't find them so I decided to freeze my own. I didn't know that you're supposed to wear gloves to process them. I had to sleep with my hand in ice water for 3 nights. I learned the hard way ... Always wear gloves when processing hot peppers. Glad to see you wearing gloves Becky!
What a coincidence! I pickled onions before the family got up this morning. I canned cherry pie filling last evening. Those were sooo pretty in the jar.

I have found that soaking leeks works well for cleaning them. They tend to float and the dirt and sand falls to the bottom of the bowl.

A lot of the Tex Mex restaurants in our area use Anaheim peppers for chili rellenos. Since I’ve been watching you, I have adopted the habit of chopping up onions and peppers and putting them in my freezer to pull out as needed and it’s wonderful for keeping them from going bad, so thank you for that great tip!

My mom would harvest zucchini when it was very small, and we would use them to dip into our dips. Small veg is so good with tziki, hummus, babaganoosh, and such. Mom was employed as child labor back in the day. She would string the blue lake pole beans. I can highly recommend them. I miss her so much.😊 You and your family are amazing. Working together in a healthy way is so important for our survival. I remember snapping green beans for grandma to can in her farmhouse kitchen. Literally a farm house with a wood burning stove. She also had a screened in porch with her very old washer and a wringer as well as a clothes line. She would tell me to stay away from the wringer as it was very dangerous. This was in Springfield Oregon. Mom talked about sleeping on the porch when it was hot. If you don't want to heat the house, you can roast the peppers and other veg on the BBQ. I'm sure you know this as I'm preaching to the choir. Blessings to you all.

Yeah, I thought I had sweet banana peppers, but grew hot ones instead . . . which I found out after I gave one to my friend's kid to eat. Whoops!

Something you can do with poblanos is “espagueti verde” it’s so good one of my favorite sides or you can add some chicken on top for a full meal.❤❤
If you like more canning recipes you may like to get a Mennonite and Amish canning recipe book. As a Mennonite we pick the zucchini blooming and freeze dry and use in soups and pasta sauce and we would bread the zucchini blooming and deep fried or baked my dad would make homemade pancakes mix and add the zucchini blooming in the middle and add more pancakes mix and fry pancakes with zucchini blooming. Did you know that you can pick the raspberries leaves and freeze dry the leaves to make homemade tea that will help with cramps. Every summer my mennonite and English grandmas will go pick the real berries leaves off the raspberries brush and wash the leaves then laying out to dry then place the dry raspberries leaves in canning jars to make homemade raspberries tea when us girls had cramps
You are amazing , working so hard and happy to preserve everything, I love the expressions on your face when something taste good or is a surprise , nothing goes to waste .
Becky, I put onion peel, celery tops and carrots in my stock. I follow your lead and make bone broth packets in zip lock bags in the freezer. I add some peppercorns, bay leaves, rosemary, thyme and a couple of chicken feet to each bag. Then when I have a couple of chicken carcasses I toss it all in my turkey roaster and let it simmer for a day then strain and can it up.
Don’t you cry when you peel and cut onions? Joy of onions. I enjoy your videos!

Hello Becky and Josh. I wanted to give you another option for roasting Anaheim Peppers. I lived in New Mexico for 25 years and in Hatch NM (famous for chilies) they roast theirs on an open flame and they are incredible. So.... what you can do is use your BBQ and that will add a wonderful flavor. LOVE YOUR VIDEOS. 😊
New Mexican here! Yes, roast on the grill, let sweat, and you can use oil on your hands to protect from the burning. I like to peel my roasted peppers under running water, especially if I am getting the seeds out. These look so good!
You can enjoy the flowers from the onions as an antibiotic tincture. ❤😊

Banana peppers can turn purple for a number of reasons, including:
Maturity
Purple streaks can appear on green or yellow banana peppers when they are mature and ready to be picked.
Temperature fluctuations
Dramatic changes in temperature, such as from 90°F to 50°F, can cause peppers to change color. The part of the pepper that is exposed to the cold will turn a blackish purple, while the part that is kept warm will remain green.
Heat and solar radiation
High levels of heat and solar radiation can cause purple streaks to develop on banana peppers.
Other stresses
Banana peppers can develop purple streaks in response to other stresses.
I never cut the inside of the onion out like you are doing and I have not had any trouble using that part. It is always great to have help. My three daughters always helped growing up and thee of my grandsons always help too. It is so nice. I always enjoy the company.
What a wonderful harvest!! I learned from one of my Hispanic neighbors how to roast those peppers and then trap the heat in a paper bag. The skins and seeds come away from peppers so easily.

Thank you for your inspiration. I went to the Farmers market yesterday and was able to preserve corn, snap peas, onions, and peppers. I still have garlic, carrots and celery. I was able to find the thinly sliced beef and prepared Philly steak and fajitas for the freezer. I would have never done this until I watched you work hard to preserve food several ways. I wish you and your family a safe and happy hoiday.

Something to remember is that when you put roasted chile peppers in the freezer, the longer they are in there the hotter they will get. I do full boxes (about 25 pounds) of Hatch Chiles just about every year. Some canned, some made into a sauce, and some in the freezer.
I also like to dehydrate caramelized onion. So good!

Becky this message is for Josh , I watch Mrs Cog Hill Farm, they have Bee’s , they have a Bee keeper that checks their hives , it was a great informational video because the Bee keeper gives a lot of great advice, one of the hives was attacked by wax moths , she talked about that ….they put the frames in with the chickens the next , the chickens cleaned them up , than the Beekeeper was going to sanitize them .

With the Anehiem and poblano peppers, you could make a a chili rellenos casserole for a freezer meal. My favorite is Denver Green chilie, which is eaten in a bowl, smothered over bean burritos or enchiladas, and even eggs. I wish that I had that chili harvest. My favorite thing to grow!
