And noone else cared enough to take it to themselves after Stannis left including Lannisters who are sitting like next to it in King's Landing... Btw about Lannisters Ed Sheeran - there is that theme about taboo of hurting 'invited guests under your roof' which Arya reminded about at the beginning as Walder Frey (one could also remember a story Bran was telling right before Red Wedding about a Rat Cook). So Arya didn't want to break it too being invited to the fire and meal.

Essentially in the books they can only tell a dragon is "female" once they've hatched an egg, and go, "Oh ok it's a female dragon then", but even then they're not entirely sure lol. Then some theorists in the books claim they might change, and some disagree and say that's definitely not it. However, to give credence to your comment, those in the books that disagree with them being able to change are sort of portrayed like those old minded people who refuse to accept something "woke". So picture it like: Hippie sorceror, "yeah they change like the flames, they can be what they want to be man" and some stuffy dude is like, "I'm tired of your woke crap! biology is biology!". Hippie, "Nah man, I've bonded with dragons, I know".
