Same. My mom's version of Caldereta is the best. we call it "Wasabi" or "Wasabe" (Walang masabe) since you cannot say anything bad about it. I have a clue on the hidden ingredient but never got it exactly. It tastes like a spicy Kare Kare with thicker sauce than Caldereta.

Merong maliit na kalye (eskinita), normal na kalye, medyo malaki ( highway) at mas malaki (express way). Kaya daw tinawag na bikol express dahil hindi po sya maanghang lang, kundi super duper anghang. At hindi po talaga makakakain ang majority kundi ang mga tirador lang sa anghang ang makakakain. Dahil lahat po ng pagkain pwedeng lagyan ng sili pero di sya matatawag po na bikol express kung hindi sya super anghang... Mako-consider po syang super spicy kung at least hindi hihigit sa 40% ng tao na kakain ang makatitiis kumain neto... Yan po ang natutunan ko sa erpat ko pong matakaw sa bikol express... Yun pong niluto nyo sigurado po ako 1/4 kilo yung siling green nya at yung labuyong hiniwa nyo mga 25 pcs po. Kaya namimiss ko po yung luto nya kung buhay pa sana sya.
