I enjoy your videos so much--not for the construction information but to see how well you're finding your way with this house. You are amazing! You figure things out and get them done. I have here a similar roof. To fill in the gaps, I had pieces of XPS insulation cut to the length between the wood beams, and wood lining visible to the outside.It was 5 or 6 years ago no issues. I gathered between the tiles and the battens there would be plenty ventilation. The mesh you have is too far in, and will let small birds to nest, and insects will bypass it. No big deal, but since you mentioned you wanted to avoid that... The eaves should be just enough for the European Swallow to build their nests, it brings good luck for the family.
I miss spending time in my Italian village when I see you interacting with the locals.
Here's an idea: make a cardboard template of the window to make sure it fits. If you start insulating the roof, it will be easier at least at the edges. The wood board above the inside wall is worth removing and building the rest of the wall with bricks. If you insulate that gap as well you'll have a better air gap/bridge for insulation. For future maintenance a service hatch is worth considering. I'd also run conduits in the roof/ceiling for lighting and maybe communication lines if you ever need IOT devices hooked up.
Wonder if you could find/order similar stones that the walls are built from to take the height to ceiling height?

Great video 👍 Use 100mm celotex on ceiling and you can use slate as a packer to even up the wall for the bricks to sit on .😊

Hi could you use a stain block paint as a primer to block the seepage, also could you frame out the small step with some 2x1 and plasterboard over? Great progress and love it when a notification pops up on my screen !
Reinforced form on the top of the wall. Fiddly but once the steel and boxing is up it would happen and look good.

can you put a lintel of some description over the wood and build on top of that? I have no experience either so a bit of the blind leading the blind. Just a thought
You might want to put a strip of wood between the rafters, tack the mesh onto it. Right now a mouse could squeeze under the open end of the mesh.
You buy your mesh from the same place I do. I had a family of mice nesting in my garden chairs over the winter, in the celler, they obviously enjoyed the taste. Keep up the good work.

What about mixing something like straw and plaster reinforced with chicken wire, a wattle & Daub or a straw bale house type scenario, it’ll also provide its own insulation and you won’t need to worry about uneven levels.

Hey Raf, just thinking could you ‘chip out’ the seepage patches with a chisels and then replaster?
because it’s probably like a tar seeping through by removing the local patches it should substantially reduce the residual tar by chipping out saturated sections
Aluminum paint will stop the seepage.

What would happen if you did the insulatlon and the roof before and finishing the walls?
Don't discount turning it into a mouse Las Vegas. Vegas hotels are charging up to $25 a day for parking and up to $50 a day extra for "resort fee". This is on top of the actual hotel cost. You could get wealthy charging mouse rent. lol
