Hi Ryan. I separate the stems from the leaves and steam them separately. Then I add chopped garlic, salt and pepper, dried mint and olive oil. Eat them as a side dish instead of spinach. Yum.
What a big help, I take the leaves, stem and root, combine them in a nutri-bullet, drink it down, my blood pressure goes down real fast and stabilize, may peace be unto you, and to your family, Shalom.
This is because of the very high levels of manganese, potassium, and water, present in all freshly-squeezed plant/root juices.
I tried them for the first time. Steamed them and sprinkled them with some Himalayan pink salt. THEY WERE SOOO GOOD! FOOD IS MEDICINE!!

my nana always cooked up the beet tops when she was pickling beets. I love them, just as much as I love spinach
Beet tops have an amazing flavor in my opinion. After going vegan my tastes changed and I love them raw in salads, give them a chance!
I don't think they are bitter, they are unique and flavorful, also crunchy, I put them in soups and other dishes. Also, SUPER CHEAP, you can get them with the root and they last a long time in your fridge. They might wilt but rarely go bad unlike other greens which are done for in a few days.

In plant's its vitmin K1 which has to do with blood clotting , in meat and other animals product's its K2 that has to do with calcium , bone exc'.
Beet greens are the no1 food with the greatest potassium quantity , that what is the most special about it.
Its non heme iron they berly absorbed it wont help with anemia it will be very difficult like that

I had been throwing them away.. I would have to cook them before I eat the beet root.
I ate them for a few months, and it's not worth the effort, in my opinion. It takes a long time to get ALL the dirt off, especially the stalks, and they're kinda bland; silver beet is much nicer
