Another thing you can do is have grated zucchini with your hashbrowns. Or what I like to do (it's a southern thing) cube up zucchini with onions, cover with water and cook. It's surprisingly good. A little tip I learned from Mary McDougall is that when using a flax egg for baking you don’t have to mix it separately. Just put the ground flax and water directly into your wet ingredients. Works perfectly and it’s one less dish I have to wash 👍
I’ve been putting in my oatmeal…flax meal, pickled onions, cooked mushrooms, shredded carrots, liquid aminos, nooch….so basically it’s a deconstructed veggie burger but looser. So good
Extra recipe ideas: 1. Zucchini cold noodle 2 ways: korean with 2 tbs gochujang+1 tbs rice vinegar topped w/ a sprinkle of sesame seeds & shredded nori or chinese with minced garlic ginger & 1 tsp of laoganma (i usually scoop the crisp w/o the oil). 2. Cold ratatouile. I usually freeze my zucchini layered w/ parchments. I put it in everything from smoothies to potage. I even ferment some into pickles with my cucumbers, carrots & peppers to be eaten w/ my “fried” rice.

Thank you so much for all those ideas! I also “sneak” some cubes frozen zucchini (without the skin) in a smouthies for my husband who had a pre-diabetes condition! No one knows but it make a real difference for the absorption of sugar!

Yes! It’s called the Hume app. Syncs perfectly with the scale. There’s an option for a pro plan as well, but I have always just used the free version and love it. 🤗
