    Of course you can have zucchini ice cream. You have zucchini bread, don't you? I wouldn't because I don't do sweet, but I understand the principle. Another thing you can do is have grated zucchini with your hashbrowns. Or what I like to do (it's a southern thing) cube up zucchini with onions, cover with water and cook. It's surprisingly good. And so simple. Thanks for the creativity exercises!

    A little tip I learned from Mary McDougall is that when using a flax egg for baking you don’t have to mix it separately. Just put the ground flax and water directly into your wet ingredients. Works perfectly and it’s one less dish I have to wash 👍

    You can also peel and dice it up, put it in a jar, add pineapple juice and have mock pineapple.

    I regularly eat shredded zucchini in my fruit salad along with sprouted lentils. Sooo good, especially with the seasonal mangos! 😊❤❤❤

    I’ve been putting in my oatmeal…flax meal, pickled onions, cooked mushrooms, shredded carrots, liquid aminos, nooch….so basically it’s a deconstructed veggie burger but looser. So good

    Extra recipe ideas: 1. Zucchini cold noodle 2 ways: korean with 2 tbs gochujang+1 tbs rice vinegar topped w/ a sprinkle of sesame seeds & shredded nori or chinese with minced garlic ginger & 1 tsp of laoganma (i usually scoop the crisp w/o the oil). 2. Cold ratatouile. I usually freeze my zucchini layered w/ parchments. I put it in everything from smoothies to potage. I even ferment some into pickles with my cucumbers, carrots & peppers to be eaten w/ my “fried” rice.

      @@LetsEatPlants no sweat. I have to come up w/ something to do w/ all the zucchinis that keeps popping up in my backyard🤣🤣🤣🤣. Cold noodle is my way. The cold ratatouille was my daughter’s way. My son’s way is spiralized then sauteéd w/ garlic & laoganma eaten on hot bed of rice.

    Thank you so much for all those ideas! I also “sneak” some cubes frozen zucchini (without the skin) in a smouthies for my husband who had a pre-diabetes condition! No one knows but it make a real difference for the absorption of sugar!

    Love this video, great ideas! Would also love to see a new sauce video...really loved the one you made. I have to say, I am European, we don't really like tangy and sour dressings a lot.
    New soup video's or....instant pot 🥰 content would be great 🤘 but of course I always enjoy everything you do ❤

    Could you please tell me what app you downloaded for the fit track? I purchased one with your discount code and have been using it but the app recommended in the little manual that came with the scale is different than the one you showed on screen. Just wondering which one I should use. Thanks!

      Yes! It’s called the Hume app. Syncs perfectly with the scale. There’s an option for a pro plan as well, but I have always just used the free version and love it. 🤗
