I completely stumbled across this while searching for making my own boudin sausage with our Kitchenaid mixer using their grinder attachment. I've been making boudin n' eggs for about a dozen years or so. I will try it this way! What I normally do is to unwrap the boudin membrane, and break up the sausage in a pan that already contains heated (medium) oil. I fry it up a bit for about 4-5 minutes or so then make a couple little pockets in it, and put an egg in each pocket. I put a lid on it, and let cook for another 2-3 minutes. Once the tops of the eggs have become translucent, but the yolks are still soft, I remove to my plate. The sausage has become caramelized, and is just a little bit crunchy (like hash browns). Cut into those yummy yolks with a corner of a toast. Soooo good! I can only make boudin eggs when my wife is visiting at her mom's though, because she doesn't like the smell of liver. Oh well -- MORE FOR ME! :-) Bon appetit!
Just picked up a spicy boudin link from my local butcher and came across this video. Never thought about using it in an scrambled egg taco. Seriously…ya had to do the taco? I’m sold. I’m trying it tomorrow. Thanks for the idea.

It depends a bit an your microwave. Mine is a 1.7kw so I would do it one minute at a time and stir at the end of each minute until it was the texture I want. Thanks for checking it out. Have a great day and be safe out there!
HI David and Buddy. I have a crazy little toenail bandit, too! Growing up we had a beagle/basset hound mix. His name was Amos and he was the best dog ever! Buddy reminds me of Flash from the Dukes of Hazzard. Lol Wow that looks really delicious! Great idea to put it in a tortilla shell. YUM!

As I was watching you cook that I was thinking it would be good in a tortilla! I can smell it over here, yum! I haven't tried that kind of sausage before but I'll look for it at our Walmart. We do a similar thing with chorizo. Thanks David! I've got a go find something to eat now. 👍🙂

That is a good southern dish, we just had it a few days ago. Not the same brand, but will check Walmart out to see if they have it here.

Tried it this way and it’s amazing! I like putting in bell peppers, onions, and potatoes in before the boudin to add more flavor
