Lobster Comparison Boiled vs Grilled - What's The Best Way To Cook a Lobster?

- We are here this week to settle this debate once and for all, which is the best lobster tail, boiled or grilled. We took 2 Maine lobsters, cooked them each a different way and did the ultimate seafood taste test and we came up with a clear winner.
Not too long ago, we did a comparison between northern “Maine” lobster and warm water “Spiny or Florida” lobsters. Well, we received all kinds of messages saying that boiling or steaming is the only true way to prepare a northern cold-water lobster. Well, you know us, we like everything better when it is grilled but we decided to do a side-by-side comparison. One tail boiled and one tail grilled.
Which do you think came out as the grand champion? The answer just may surprise you!

Over here drooling my man excellent cook and personally agree grilled/smoked is only way to go I will never boil my lobsters any longer. Same with crab legs as well!
You know Matt, it doesn't surprise me that we are seeing eye to eye on this! It just adds that extra bit of flavor.
Hey Ron, I have used water that I have had sitting in my smoker during a cook. I use hickory and I save the water and freeze it for when I boil lobster tail. The water is in the smoker for about an hour and the water gets some of the smoke. Don't believe me, give it a try. The lobster tail comes out with that slightly smoky flavor and the texture is great.

We are a house divided, my kids voted boiled because of how bright red the tails were but that grilled had me drooling so I picked the grilled.
The best part is, there are no wrong answers here!
First, let me say Thank You for doing this comparison. I think you did it well, and fairly. Although I don't agree with your conclusion, I can understand it. If you simply like the taste of grilling, boiling can't give you that. I myself love grilled foods, but sometimes I just feel the complex nuances of a food's natural flavor must prevail, and for me, that's the case with North American Lobster. In fact, I was one of the people who responded to your last Lobster video with the statement " I love Kamado grilling, but to taste the real flavor of lobster, boiled (or steamed) it must be." I still stand by that. I have had many many lobster in my day, both boiled and grilled, but I can't recall ever thinking one of the grilled ones being up to par. One thing I especially enjoyed about your video was seeing these cooked bugs side by side. Just seeing the natural red pigments on the boiled one, which the grilled one completely lacked, makes it clear that grilling is actually destroying some of the natural compounds and nutrition you would otherwise be enjoying from boiled ones. That is yet another reason that boiled is simply better. A crazy statement, were it about almost anything else.

The nice part about this type of thing is that everyone has their own personal tastes and it is great that we can understand and accept each others opinions. My dad feels the same exact way that you do. I know this, I'm happy to do as many lobster comparisons as they'd like me to! LOL

Grilled is way better and it's not even close (IMO). For our family dinner on Sunday I grilled lobster tails, jumbo shrimp, and scallops on the cast iron flat top. It was all so good.

I have to agree with you! There is nothing like the taste of a grilled lobster tail! These look absolutely amazing!!! Growing up in Fla, I’m used to Fla lobster. And miss my fresh seafood. Being gone since 1993. After Hurricane Andrew. I now moved back East and living in Northern Georgia and would love to find a place that delivers fresh / frozen Fla Lobster . These main lobsters look absolutely amazing though! So huge!!!! I want your job tasting Lobster!!!! 😅😂

There's a 3rd way- Baja style, pan-fried in butter. I found it delicious, although Baja lobsters aren't quite the quality of Maine lobsters.

Thank you for this ! Ive a hankering for lobster !! I bought several. Ive tried just about all cookong methods. What about grilling on a Traeger pellet grill ?? All different flavors of wood ? Im going to subscribe. Ill let ya know!! West Texas here. Its hard to find fresh lobster of any size
Hi Charlie, welcome aboard! You should be able to get great flavor on your Traeger. You will eventually come to the charcoal side of things. LOL

I have grilled lobster tails on my BGE and they are delicious! But here's a secret or actually Emeril's secret and it makes a big difference. Split the lobster tail down the middle on the top to open up the shell and stuff the opening with a mixture of ritz crackers and butter that were mixed like a graham cracker crust in a food processor! I use about the same portions as a graham cracker crust. This gives the lobster a wonderful buttery flavor AND keeps the lobster moist and tender while you are cooking it. Try it, you will like it.

I completely agree, however I think the level of improvement gained from going from grilled to boiling is greater than what is gained from going from boiled to steamed. Also, if you listen to why he found the grilled to be better, I am pretty sure he would not prefer the steamed to the grilled.
@@WilfredForbert I couldn’t disagree more with everything you just said. Lobster purists (like me) want the flavor of the lobster intact, running it under water or boiling it releases all the flavor. I don’t want your charcoal flavored rubberized lobster. Thanks
