  • What is the difference between Maine lobsters and Florida lobsters? Which one do you like better? Today we will find out which of these two amazing lobsters is best on the grill!
    When I hear the words lobster tails, my mouth instantly starts watering. The luxurious, sweet treasure from the sea is enjoyed in fancy restaurants all over the world. This week we are going to show you how to prepare a show stopping presentation that you will want to make again and again.
    The big decision is, do you want northern, cold water Maine lobster tails or Florida, warm water, Spiny tails? Both are most definitely tasty treats that you’re sure to enjoy, but….which is better? We answer that very question in this weeks video.       Grew up in the norhteast. Sometimes caught them with my dad on the rocks at the beach. Something about the cold water of New England makes them grow HUGE.

    This video looks honest and legitimate to me; it's how I've always compared the two lobsters: Maine is sweeter and more tender. The reason for the difference is the much colder water the Maine lobster lives in -the colder the better. That's also why the Port Jeff lobster - nowadays- is gonna suck. Because the water has warmed up in Long Island Sound. Same reason Northern lobster from Rhode Island do not taste as good as a Maine lobster (same species) - because Maine water is so much colder. But know this: if you freeze lobster meat all bets are off. Freezing totally changes texture and taste of lobster, both varieties. Never freeze lobster meat.

    I tried Spiny/Rock Lobster for the first time at Red Lobster/ along side Maine Lobster on the same dish. I have to say I like the Spiny Lobster better.

      Me too. I like the texture better. The Maines usually feel undercooked, like a scallop texture, well the Maine lobsters I have had from restaurants. Maybe steamed or boiled is not as good as grilled. If you want sweet, I say go get Crab legs, they are best and then I say Rock lobsters due to texture and then langostinos, Maine lobsters, regular and jumbo shrimp and finally scallops. That's my order and fish is totally other category with ginger bourbon or ginger soy salmon, then dill butter salmon at the top! I like firmer textured meats.

      It's frozen at that restaurant. You absolutely cannot freeze lobster, it ruins both taste and texture.

    Nice!!! What was the pit temp and did you do anything besides pull the meat out of the shell and baste with the butter mix? Also what herbs did you use??

      That is all we did Tony! I used some sage, rosemary and fresh Italian oregano if I remember correctly!

    All cold salt water fish have a better taste according to my taste buds. Lobster grilled to perfection and dipped in herb butter is a win-win. Guaranteed no leftovers. Thanks for sharing.

      I don't care about one lobster or the other... I eat both... but if we are talking about north vs south fish filets? Like normal humans going out fishing, or going to a restaurant and picking from various menu filets and not some ultra rare $1000 plate exception... its not that hard. If I head out from the northeast, what am I finding? Striped bass, fluke, cod, black sea bass, etc... or inshore, walleye, pike, musky, trout, salmon, etc...
      Ok...
      Now I head out from the southeast and troll or drop bottom... or walk into any local fish restaurant... Wahoo, Mahi, Yellowfin, Mutton Snapper, Grouper, Tilefish, Tripletail, Hogfish, etc... I don't think it's a hard choice really. Ever had triple tail or hogfish filets caught that day? The only exception I can think of, would be bluefin tuna. Otherwise... nah...

    Northern or cold water lobster takes longer to grow hat's why it's more tender and sweet and warm water lobster grows faster and is tougher more like a shrimp.

    Have you ever tried deep fried Maine lobster? I drove truck and back in the 80s I to spend the night at HoJos in Portland, Maine. Their dinner menu special was deep fried lobster with a beer type tempura batter on it. Plate was loaded and served with melted butter. I even pigged out with a second plate. I got up in the morning and headed North on 95/295 and stopped at a little Lobster shack for a Lobster roll for breakfast. Those were the days. :D

    I lived in the keys 20 years, husband was a lobster and stonecrab fisherman, but we went to Shediac (lobster capital of the world) monthly and ate lobster at their famous restaurant each trip. I have to admit is better than our keys lobsters ❤
    Got some here recently caught by my brother in law 😍

    I love the explanation of the spots on the tail . Stop no one knows why it’s just camouflage . The Maine is dark because the bottom is dark camouflage. I love them all . Northern cold water is better . The colder water the better .

    Yes , l live in Srilanka and Australia these days, l am tasting rock lobsters of the green and the dark red kind find here , it's bit firm techture and good but in Australia we get the North Atlantic red 🦞 , which is tender and sweet and better , l think.
    In Australia we also have Western Australian rock lobsters too they are good too. 👍

    I live in up in Canada and have caught many Canadian lobsters(ones with claws)but I eat it so often that I would honestly pick the spiny lobster. I kind of want a pet lobster now but that's a different story! Great video Ron

    I’ve ate both back to back and I felt opposite lol thought the spiny was sweeter. I’m sure it varies though. Either way both are great!

      Hey Brandon, thanks for letting me know, I just fixed the link and it should work now. If memory serves me correctly, I did this at 250°. That's usually where I cook lobster at.

    Great stuff!
    Just wondering if you have tried grilling the lobster tails the same way but with more of the meat tucked into their respective shells. The cooking time might take a bit longer, but the meat would retain more of its natural juices and also absorb some of the flavour of the roasted shell.
    Personally I prefer spiny lobster, hands down. I actually find the spiny lobster meat to be sweeter and more tender than Atlantic lobster.
    Spiny lobsters command a higher selling price too, don't know if that's due to lower catch volume, but there is definitely a preference for this type of lobster (over the Atlantic clawed lobster) in Asia. Over there the spiny lobsters sell for at least double the price of Atlantic lobsters (i.e. live ones, not dead or frozen) which is a lot because the meat yield is lower for the same weight (no claws).

    I grew up in Southern California and several times we went down to Baja to a pretty little seaside town called Puerto Nuevo for a lobster feast. The lobsters were small, like the spiny lobsters, and they cooked them in butter in pans. They weren't as good as Maine lobsters but they were CHEAP and delicious!! For $25 you would get a heaping platter of lobster that would feed four, easily. I'm sure it costs a lot more now, but we got our lobster groove ON for cheap back in the day.

      Really??? I have always looked for them every time that I'm in the water but have yet to encounter one. I'd love to find some. I'm headed down to Summerland and Little Torch soon so maybe I will get lucky....

    American Lobster is my "trapped on a dessert island" pick for my one- and -only choice of lobster species if I had to make one ultimate choice :) Good thing I don't . The warm water spiny lobster from Mexico , Maui , Florida is Delicious as well. While not as sweet spiny has a robust and very complex flavor that is very Discernible which brings it very close to the American Lobster in satisfaction . While the cold water verity wins out for me ultimately. With the unique complexity of flavors instilled in the delectable warm water spiny lobster it would be a very bleak day when I could not indulge in both of these large marine crustaceans. Team "Lobsters" for the win .

    I think northerns are better because they have claws. However, just comparing the meat I think they’re very similar

    I love both kinds, but I honestly have to say I think the North Atlantic ones taste significantly better. It's a sweeter and richer flavor. That statement itself will likely get some disagreement from others, but here's another one that definitely will: They taste best steamed/boiled, not grilled. I know that's heresy, and I wouldn't say that about many other things. I love Kamado grilling, but to taste the real flavor of lobster, boiled (or steamed) it must be. If you are going to insist on grilling them, then I would agree there is not as obvious a winner between the two types of Lobster, and both are pretty damn good.

      @@FOGOcharcoal Absolutely ! You could name it "Carcinogen or not to Carcinogen" :) Personally I am a legend in my own mind . But here is my take never having personally grilled a lobster . I think the American lobster will win out Boiled over grilled the meat is so succulent and sweet . But the warm water spiny lobster with its multitudes of complex flavor's ; the grilling would bring this out more than boiling . So yes . Make a Grilled vs Boiled lobster video with both species and invite me over to be the special guest tasting judge ! Thanks for doing what you do.

    I love the northern lobster. It's way sweetner. I'm from Florida and ate lobster there. No contest when it comes to sweetness and tenderness the northern lobster.

      You hit it right on the head it seems the colder water the better they taste same goes for the king and snow crab the king yields more meat but the snow which lives more north in colder water is sweeter

    I read that long ago the slaves were fed lobsters cause no one wanted them they were considered trash . It almost makes me wish I was a slave

    The paired feet on underside of tail means it’s a male females have no underfeet
