Thank you fo the shoutout and for reacting to my suggestion. Saltatio Mortis play folk metal, e.g. they use a hurdy-gurdy and a bagpipe in their music and it just sounds awesome. Take any instrument you like and it will sound great with metal music, as proven here. Two more suggestions: Ayreon - The 6th Extinction from the concert Live Beneath the Waves, it's the finale of an incredible show and Plan Nine - Before the Morning Comes, the newest project of Arjen Lucassen, the man behind the Ayreon project.
