Haha, for a second I thought you were gonna have a Clickspring moment when you cut the gears by hand. And then you used a CNC and I cheered :P
If you wanted smoother gears, I would use a polymer like Delrin or UHMW PE. They have a lot less friction, are non absorbent, and will wear better over time.
Also while you had access to a fab lab, I would recommend making a small drilling guide for center drilling dowels. When I was making my wooden lightsaber, I made a series of circles that I then stacked into a tube. At one end, I put a cap on it that had a hole drilled perfectly centered. The little jig slides over an appropriate sized dowel and holds your drill bit in place while you start the hole.
I imagine if he used better gears it'd be on a frame that's also a lot better too. Wooden ones would work fine
Clickspring is satisfying in the same way cooking shows are. I swear to god all those brass shavings make me hungry.
Merci Winston, I love this. About the jig, it sounds great, would fix the centering for sure, but the rollers themselves are wobbly/unbalanced ... It's not that big of a problem when I am flattening over 10mm, but as soon as I get closer to 4 it does become a bit annoying.
@@FrenchGuyCooking how about using PVC tubing instead of wood?
@@FrenchGuyCooking Also, I used to make a lot or mdf gears for teaching kids at a museum. One of the things i'd do on gears i wanted to be longer running but still cheaper than delrin is just get a big cheap bottle of ca glue and pour it on the teeth so they saturate a bit. Just make sure to keep running it slowly until the glue sets all the way :P it spreads the glue evenly and keeps them from seizing. It's kind of like tempering just the teeth :P

Hey Alex, been watching your stuff for a while and I just wanted to say a massive thank you for constantly producing such good content. RUclips these days seems to be full of needlessly and aggressively negative, self absorbed, money and metric obsessed creators and commenters, and your channel is a breath of fresh air. Your constant positivity, creativity and love for what you do makes the world a better place. Keep it up!
Adorable! That's French for adorable, people.
Thank you RUclips, this is amazing to watch this man just nerd about croissant and machines. This is adorable and I love it.
Alex my dude - you need to buy a 3D Printer! I have a Tevo Tornado and it's cheap, easy to use an it makes things like gears super simple.
I love how you bring cooking and engineering together
Can you please give us a full detailed recipe for the croissants?
Watch previous vids of the series?
I tried but the first recipe is not very clear in its instructions
I agree there needs to be an written article article
Step one: defeat the Ottomans.
For about 10 croissants : (metric system)
500g of flour
300ml of milk
50g of sugar
12g of salt
15g of fresh yeast (You have to dilute the yeast with the milk. The milk has to be at a temperature of 25°C to activate the yeast.)
190g of butter (for the turning)
Egg yolk and/or milk to glaze before baking
me and my step father have been planning to build a dough sheeter for years, not only for croissant but for bread making in general, this one looks like the perfect one for us, but he doesn't speak any English or French so HERE COME SPANISH SUBTITLES. The only change is that we'll probably do the gears by hand and use a handle instead of a drill
We didn't get to see the croissant you made baked though. One of the satisfying things of your vids are that you usually end up making food with whatever you did in the video. I wanted to see if the inside of that croissant looked the same as the on in the bakery.

J’ai une question alex.
Tu as fais quoi comme études supérieurs car j ai l’impression que tu es plus un ingénieur qu’un cuisinier ? 😂
Il èst un ingegnieur en télécommunications.
Hy Alex. I learnd backer many jears ago. I rolled the laminated dough with a big hand-roller. This was hard work. The laminating-butter was to expensive for my boss, so we put the butter in the kneeding mashine and put some weetflour in. That bounds the water in the butter and you get good results with that method too. What is importend for laminated dough is, that the dough and the butter have the same consistency at the same Temprature. If this is not the case, the softer layer will be pushed to the outside and your layers will be poor and uneaven.
Whenever alex posts, it's an instant click😉

You want the best butter? You make it yourself! That's a new series, but it's worth it... They found butter in a bog on Ireland, 2000 years old. Still good... You know it can be done, do it Alex!
I drool over every croissant episode. For your machine you might want to replace the plywood with melamine laminate to prevent any sticking food from picking up wood splinters especially since you cut on it.
As you were cutting the dough on the board i couldnt help but be distracted by the thought of someone getting a splinter in their tongue. Yikes.
I love that you made three gear wheels and put them in the contraption, even though no wheels would do the job. Could've powered the roller directly from the drilling machine but that wouldn't make the video as interesting and wouldn't require any imagination. This is what this channel is all about, finding new boundaries, new ways, new territories. I love it. So honest, so optimistic, exposing the best quality of human mind through cooking. Amazing, GJ thank you for the ispiration.
I swear one day Alex is going to start working on a frankfurter machine and by the end of that series he'll have created a Marble Machine, before Wintergatan finishes his.
I could watch a whole ASMR video about Alex making croissant! Kinda started at 8:09, and I’m here for it!!
"Man can't compete with machine." - my girlfriend
If you want a straight roller and axis, you put a rod through and through, then you put that roller with the rod on a lathe, attached on both ends, and you machine the wood so that it's completely straight. En français : tu perces de part en part le bois avec une tige en métal, tu mets cette tige et le bois sur un tour, et tu usines le bois, ça va être parfaitement droit.
Is this why This Old Tony was making gears
Sure hope it wasn't just for his mini lathe.

If ToT isn’t t going to comment I will.
The table needs to be supported on both ends. It rocks when you move it and that affects how the rollers perform. That is why you were having difficulty keeping the dough in a rectangle.
The table itself should be wrapped in a clean muslin or cotton sheet that has been powdered in flour. That really improves texture and roller performance especially with soft doughs.
“You cannot buy this beurre in a store”. Damn patissier. Let the hunt begin.

Dough Sheeter 3.0 should have a little electric motor and two limit switches to make it go back and forth with just a simple switch turning it on. Doesn't have to be like the big pro one, but just something simple where you power it, it bounces back and forth, turn off, adjust, turn on. Amazing series though, using ingenuity to overcome hurdles. And make amazing croissants in the process. Keep up the awesome videos!

Healthy Recipe Channel now I want a Brad Leone and Alex collaboration
Add an Arduino and stepper motors for a fully automated version - thanks for sharing (your passion) :)
Who here thinks Alex should manufacture machines for cooking? He made loads of them just with his creative mind!
AN idea for an improved version could be to use a CNC router to cut out a hole out of the sheeter board for a marble insert and replace the top roller with a marble roller. That way you could chill both parts in the fridge/freezer before use and there is no danger of heating the dough when rolling. Replace the gears with metal ones and use a bigger motor to drive them faster and you will be turning out croissants much faster, as well as other dough goods.
I don't know if there's any other Metatron fans here, but Alex looks like his culinary french twin.
I can see it
