These are the BEST!!! Like another viewer said I froze a dozen in balls and then would bake 6 at a time. I used butterscotch and white chocolate chips inside of regular chocolate.

Are you sure weck jars do a better job than mason for starting the starter? I've tried both ways and found the opposite to be far better...faster to work. It seems the glass is too heavy to let enough air in the jar.
You can use any kind of sourdough discard for this recipe, however, flours like rye or whole wheat, for example, will slightly alter the flavor of these cookies. For reference, I feed my sourdough starter with bread flour.

These are the best ever, I also make these but swap out the ingredients for the inclusions, like instead of chocolate chips, cranberry walnut

Would I be able to sub the sugar for maple syrup or raw honey. Every time i try to make sourdough cookies they come out much more cake like and puffy?
