I would have never tried this in a million years; I never thought about stir-frying cucumber... until now. Thank Jeremy, 👍it just so happens I have two cucumbers in the fridge 😋

This sounds good. We usually think of cucumber as a cold vegetable but I bet it pairs well with the spice!

Absolutely! It's a delightful surprise how well cucumber pairs with the spice in this dish. The heat adds a new dimension to the cucumber's flavour and brings out its natural freshness even more.

I never even thought to do fried cucumber but I put 100g minced beef in a pan, this has 23% fat so a very high fat mince beef, then added 100g sliced cucumber cut into approx 1cm x 1cm x 3mm pieces, then 100g cherry tomatoes, each cut into 4, fried it all, added plenty of pepper and salt... oh lordy that cucumber when coated with tomato and the fat from the meat is amazing. It could be improved by making the cucumber 150g and tomato 150 and also throwing in mushrooms. The cucumber was the star of the show. I could have also done with frying it longer and maybe adding _everything_ raw to the pan at the start then fry all of it for 15 to 20 mins on an above average heat (6/9 on my electric hob). Slightly charring it all is the way to go! It needed something else like mushrooms. Something has to soak up the fat of the beef when it's 23% and my above meal only using 100g beef/cucumber/tomato did come out a bit too greasy. It's such a simple meal and fast to make but it's very good.

Looks really tasty. Like to try it but am very much afraid that I won’t reach that smokey heat for flash-fry on my (induction) kitchen stove. Any tips? 🙏🙏

You're supposed to take the seeds out.

Yeah I saw another stir fry recipe with cukes where they cut them in half and scraped out the seeds then sliced them into quarter moon shapes.

@@edisonjohnson8638I always take out the seeds but only when I am not sure the cucumber is fresh. At least that’s what elderly folks taught long ago. Cut off the cucumber ends which have toxicity and if not freshly harvested, remove its seeds, too.
