My research shows that this is the most authentic way to make these cookies. Many will hack and ice the cookies after baking but as I’ve found, that’s cheating. I think you did a great job making them. I made them last year. They turned out well but not great. They are kind of time and labor intensive but I think that’s what makes them special. When I used to frost first, I would gently push through the front/icing side with a toothpick to “pop” it out of the back of the cookie cutter and with a tiny paint brush (for baking use only) would touch up the icing. Now, I frost _after_ cutting just because I love the messy/organic look but either way, they taste the same: simply delicious!! 😍

I got myself a foldable Zimtsterne cookie cutter and it makes all the difference in the world. Much faster to get the cookies out of the cutter. You will definitely have to make a bunch because they get eaten very fast.

You said that you wanted to do a tutorial on making wax wrap. I looked and didn’t see it. I hope you are planning it soon. I also would like to know where you purchased the silicone bags. I found some on line but I’m not sure if they are the real thing. Sometimes other chemicals are mixed in that are not good. Thank you for taking the time to make German tutorials. I made these today and they were fabulous. My husband loved them as well. I ran into some issues thiugh. I didnt have a star so i used a cat cookie cutter and I think I rolled the dough too thick because before they were done all the way the frosting started to brown and when i cut them out the frosting was sticking so I changed to a round cutter and that was much easier. Mine were chewy which I liked but are they supposed to be chewy or crispy?
I was wondering if covering with aluminum foil halfway through baking would mitigate browning of the icing..or would this mess them up, touching the icing? Thanks
I'm in general against the use of aluminum foil since it's so bad for the environment and I've never had it that the icing would brown. Just keep an eye on them and all is going to be great! Happy Baking! :-)
These Cookies look delicious! Like you, Barbara, I am trying to limit or eliminate my use of single use, disposable products, like plastic Cling Wrap and Aluminum Foil... I try to use reusable Plastic Containers, like Tupperware, when possible...
I grind up my own almonds for this recipe, it tastes way better. Almond meal is ground up almonds . . . if you use the almond flour, you'll get a more cake-like consistency of the cookie. It will not be as chewy. The chew factor is what makes these cookies so good, in my opinion. There are like a gazillion different recipes out there for this cookie, all so different, it makes me crazy. lol

Personally, I wouldn't want to change a thing in this recipe but that is probably just because it comes with memories and tradition. But if you want to replace the cinnamon with cocoa ... why not? I would think that it works.

Hmm try using confection sugar instead of water to dip the cookie cutter in. Seems like a good recipe I will try and make.

No, I wouldn’t add that. I like them the way we make them and the cinnamon taste is what we are going for.

Right, I misspoke. It was the freezer.

I have heard of people making Star with other flavors like Chocolate instead of Cinnamon. Have you ever made them with other flavors?
