I have another method of convenient way to cook silky smooth soft porridge. Steam rice in water in stainless steel bowl 1.5 to 2 hours. Then pour into pot, add sufficient water (consistency) and boil in small fire with lid slightly open to let excess air out to prevent over flow. Another 30 minutes. In between, you may add marinated chicken, chicken powder or abalone sauce, ginger thinly slice and toppings fried garlic and chopped green onion and a dash of white pepper powder.
Hey chef, you know what goes well and can be a substitute for scallop paste? Crab paste. But not the one that is soaked in soya bean oil. the pure crab paste.
