I agree, Brisket is the king. Great job keeping it simple for people who just want good brisket without doing a bunch of crazy stuff.
yes, people can quickly complicate the process. some many variables that can be tweaked, it can quickly get out of hand lol
First video of your I watched. I like the way you did it. No nonsense and stalling around. We dont need 1/2 a video of you trimming a brisket, 1/4 seasoning and 10% cooking and cutting. Nicely done.

That looked great Sal. I love my SNS too, it's almost set and forget for the most part. This is the second brisket on the kettle video I've watched lately. Think the universe is telling me to do a brisket on the kettle. Nice video!

Nice cook SJ. I actually like to trim and vac seal/freeze a couple weeks before hand so I don't need to do any prep work. Unfortunately last time I cooked a brisket my bark was very hard do you have any tips on how to prevent or what causes this? Cooked it on my Weber kettle as you did here.
that's a good idea! I could actually see that work out for me too. Get some briskets, trim them and ready to rock whatever weekend I want brisket.
hard bark? both top and bottom? did you wrap? how hot were you running? what kind of rub did you use? water pan? did you spritz?
