Emily Lorenzo and Frank were great, but I absolutely adore the "season 2" cast :D Only a few people were misses for me---I used to not be fond of Daniel until I saw a lot more of him and found him to be very sweet, and the Level 1 chef who put WAY too much salt in his enchiladas whose attitude I just found a bit grating (I'm sure he's a decent person tho)
I always forget that Daniel has like a Mexican background, that's the same recipe my mom used to made to confort us as kids, which I still do to this day when I need my Mom's hugs
I loved this episode! But, I will say.. Daniel flipping his square flan onto a small round plate was easily the least satisfying things I’ve seen all day 😂😂 It did look amazing cut, though!

Dang Emily did a pro chef move with separating the yolks from the whites. In reality, separating them with your hands is better as the yolk has a very little chance to crack. Your fingers are after all softer than the sharp rigid edges of the shell.

You didn't just say we're cooking this in a water bath because we need to. You told us what a bain-marie is called and why we use it. Sharing warnings of possible pitfalls, tricks to make life easier, and a complex unique and interesting flavor palate for your dish. Once again thank you. Also I love Emily but I'm pretty sure she leveled up like 5 videos ago. Remember french toast when she dipped sandwich bread into egg and milk and put ketchup on it. there hasn't been a real level 1 cook in a long time, a real level one would have used instant pudding.
I will say when she ran out of gas from the small torch I wish she had shown us how to do it using the broiler. There are some really interesting tip and tricks that would have been really impressive. But still Thank You Lani! You are amazing!

You can also use a disposable plastic water bottle to seperate the egg whites. Just make sure eggs are still cold . Squeeze bottle and put bottle opening on yolk and let go of squeezing the bottle. Yolk will be sucked into the bottle. Just make sure the angle of the bottle is right. With alittle practice it works very good when you get it right.
Well, I guess that Daniel had more experience than Emily, it’s just the things they decide to make today(You don’t necessary need a tempering process for the flan he is making) Thus, he did kinda make everything from scratch, while Emily used pre-made crust and (dairy free)pre- whipped cream.
Daniel’s flan is Brazilian dessert 101. The perfect recipe is: 3 whole eggs, 395g of sweetened condensed milk (1 can) and 395g of milk. Vanilla is optional. Just mix everything and follow the same steps he did for baking and the caramel
We call it Flan Napolitano in Mexico. I make my flan exactly like Daniel, although the (unflipped) top never comes out as brown as his. Either he overbaked it or some of the caramel sauce made it to the top. But his flan looks good!

Took up your question about how to get plastic wrap not to stick together. I put a box of plastic wrap in the refridgerator for a few hours & - Viola! - Tore off a square & then waved it back & forth a few times: the sides did not stick together. Only did this once & may have gotten lucky, but it may be worth giving it a try :-)

When I need to separate eggs I only do it with my hands. Don’t use the egg shells it punctures the yolks every time
This is the method i used at work. With gloves of course, since it was the fastest way working in a high volume work place
