- My mother in law wasn’t doing so well. She has been very unwell even now. So, this is what we have been making.
I have used Gobindobhog Rice for the congee, but you may use any short grained rice of your choice.

never put ginger in cold water. It gets bitter. Always put it into roaring water (learned this after making a very expensive mistake hence I felt the need to put it here as soon as I saw you throwing the pieces in the room temp water T_T)

I remember Doobydobap did a video on congee and she mentioned that all asian countries have their own version of congee and I remember commenting that Bengal(located in the east of India) and Bangladesh have their own congee which we call phyana bhaath! Best paired with potato mash and soft boiled eggs and a teaspoon of melted butter!

Sesame seeds. Please use them carefully. They sputter so much, they might get into your eyes.
